Mediterranean Tuna Salad

Kim's Ultimate Meatloaf

Wow -- this was the best meatloaf I have ever made, and I've made many recipes! I used lean ground turkey, and bread crumbs instead of crackers. I only had diced tomatoes on hand, no sauce, but I think I will do this again this way -- they chunky tomatoes were fantastic. I also followed other readers' suggestion and halved the sauce, but next time I'll do the original amount (maybe it's less because of the chunky tomatoes). I baked it in a brownie pan in a dome-shape, and would have enjoyed more sauce to cover it. The sauce is delicious! Very tangy and flavorful. My husband HATES meatloaf, and he gobbled this up and went back for seconds! And no ketchup needed! I am adding this to my rotation!

Braised Balsamic Chicken

This was a really good chicken breast recipe. I made it even easier by using canned diced tomatoes that are already seasoned with oregano, basil, and garlic. I added some fresh garlic as well as a carton of sliced baby bella mushrooms, and it was delicious. Good enough to serve company. I served with brown rice and Dad's Pan Fried Green Beans (also delish, and made with balsalmic).

Dad's Pan-Fried Green Beans

Yum yum yum. I cooked the beans longer because I don't like them so crisp. I used fresh haricot verts (the little skinny green beans). They were SO good. I made them for another couple and they both had seconds and asked for the recipe. And it's so easy! My husband even liked them and he claims not to like green beans!

Cheesy Salmon Pasta

This was SO good. I didn't think it would be, but was trying it for the simplicity and health value, and I am amazed! I wanted to eat the whole thing! I used whole wheat spaghetti, the salmon in a pouch, and otherwise followed the recipe exactly. YUM! I can't wait to make it again.

California Chicken Spaghetti

I used whole wheat angel hair, canned diced tomatos (seasoned with garlic & basil and also added extra fresh of both), and the Paul Prudhomme seasoning. I also added sliced fresh mushrooms, and used both feta and fresh parmesan cheese. The meat had a wonderful flavor, and the meal felt overall very light and healthy, and it was SO EASY and fast!! I will be making this about once a week from now on.

Dirt Cake I

I made this for an adult dinner party by changing the following: I did layers of "dirt" and creamy filling in a large glass bowl (so the layers can be seen). On top I put chopped fresh fruit -- strawberries, raspberries, blueberries, and kiwi. It was a huge hit. I have also made it in individual serving dishes with the fruit on top, which makes for a beautiful presentation.

Great Mac and Cheese

Here's what I did: I used whole wheat elbows, so I boiled them in water first until about halfway done since they tend to require longer cooking. Then I followed the recipe exactly, using the tip to stir the milk in bit by bit to avoid lumps. It worked beautifully and was super easy. Very creamy and the onions give it texture without being overpowering in flavor.

Chocolate Chip Banana Muffins

I altered this recipe to make it slightly healthier. I used whole wheat flour in place of regular flour. I also halved the oil (used canola) and added 1/3 cup unsweetened applesauce. They turned out really well, and the wheat taste and texture makes them a little heartier and a lot healthier. Outstanding right out of the oven with a glass of milk.

Amazing Whole Wheat Pizza Crust

I made this with all whole-wheat flour, no white flour, and it was excellent. I froze half the dough after letting it rise, and used it a week later to make an equally tasty healthy pizza!
