Beef Lo Mein

Oh my, this is sooooo good! We love Asian food in our house but have never tried making lo mein. This was very close to restaurant style (bf said he thought it was better). The sauce gets nice and thick and coats the noodles perfectly. We used Japanese noodles instead of spaghetti. We chose pea pods, carrots, water chestnuts, and green onion for the veggies. Everything worked so well together. Has a nice heat - I love sriracha but found I didn't even need to add any. Will definitely make again!!

Broccoli Coleslaw

Really good! As others noted this is probably way too much dressing though. Either half the dressing or double the broccoli and carrots. Really good flavors though, nice combination of tangy, fresh, and crunchy.

Oven Roasted Parmesan Potatoes

These are so good!!! I slice the potatoes instead of doing halves as others suggested. The outside gets so nice and crunchy and the insides are so soft and fluffy. Definitely one of our new favorite side dishes!

Sweet Hot Mustard Chicken Thighs

Made this last night - the taste was great! The skin got nice and crunchy and the bone-in thighs really ensure that the meat stays juicy. Anyone using boneless skinless thighs is really missing out in my opinion. Couldn't find dried chipotle pepper, so just upped the cayenne, but other than that made exactly according to the recipe. We did have a mishap where the onions along the edges of the pan burned so we may have used too big of a pan. We just chucked the burned parts and everything else was still delicious. Will definitely make again, in a different pan!

Quinoa, Beet, and Arugula Salad

My BF did not like this at all. I liked it OK, thought it was a bit much on the tangy/sour side with the vinegar and goat cheese so maybe if I make it again (just for myself) I'll go easy on one or both of those ingredients.

Spicy Rice Noodle Salad

I LOVED this salad! So refreshing on a hot summer day. The carrots give a nice crunch and some added texture. I love Asian food but I've never used fish sauce before and I was a bit apprehensive. However all of the flavors work together perfectly. Don't be afraid! I think this salad is going to be in heavy rotation this summer at my house. I will say, the rice noodles took forever to soften just sitting in hot water so I ended up boiling them and then hitting them with cold water and it was fine.

Amy's Cilantro Cream Sauce

This is great! I made it exactly according to the recipe and tasted it - the flavors were great but I wanted it spicier so I added a chile pepper. So far I've eaten it with tortilla chips and on grilled chicken - tomorrow turkey burgers! Definitely a new fave!
