Chuck's Favorite Mac and Cheese

This was awesome! I omitted the bread crumbs since my husband and I aren't fans - I added more of the cheddar and parmesan on top. Even with that adjustment, this was easily the best mac-n-cheese!

Tofu Lasagna

After reading the reviews, I also added vegetable broth. I enjoyed this dish very much. My boyfriend didn't but he's not big on Indian cuisine. Since I'm the one who reviews...4 stars!

Black Bean and Salsa Soup

One word - yum! We added rice to the recipe to thicken up the soup. Other than that, we were true to what's stated. Spicy salsa gave it a great kick!

Egg-Free Dairy-Free Nut-Free Cake

My mother is allergic to eggs so she hasn't had a good cake in a long time. This cake was so moist and the chocolate was so light...I ended up making 2 of these cakes in 4 days! GREAT recipe!

I got a bit confused because the shopping list and the ingredient list didn't match as far as portions and measurements. I might have put too much cream cheese...but it tasted very good.

Mexican Bean Pie

Great recipe! I replaced the green pepper with onion (just because we don't like bell peppers)and used corn tortillas. The spices are great!

Eggless Tofu Spinach Quiche

Tofu 'Fish' Fillet Sandwiches

I liked this recipe baked rather than fried. I've never has a fish filet before so I don't know if it's similar but I liked finding a different way to prepare tofu!
