Mini OREO Surprise Cupcakes

These came out awesome! The only thing I changed was using a cream cheese frosting instead of Cool Whip since I forgot to take that out of the freezer earlier in the day. My co-workers LOVED them and have already asked for them again. I did make the cupcakes two days before hand and iced them the night before bringing them into work. They stayed moist and delish!

No Bake Peanut Butter Pie

Winner, Winner Chicken Dinner! This was so yummy! I made 1 and 1/2 times the recipe and used the larger graham cracker crusts they have at the grocery. But...I didn't read about the 16 oz packages of whipped topping, I needed 24 oz but only had 16 and it turned out great! Work LOVED this and can't wait for me to make it again!

Pineapple Upside-Down Cake V

I LOVE this recipe! I use all recipes as guidelines, here's how I changed this one up. I make one larger round cake, I have a great round cake pan that fits all of the batter into it. I add the crushed pineapple to the batter when making the cake mix. When I have everything added and mixed, minus the water/pineapple juice, I add enough pineapple juice to make it the right consistency. I then bake it for 50/60 minutes. My co-workers request this cake all the time! The rings/cherries on top make this cake look so professional, and it's so easy! I also have found pineapple cake mix in the store to make this cake especially pineapple-y!

Crab Dip

LOVE THIS!!! So easy and delish! I added in some artichokes too, which worked out great. Either way this dip is a winner! Everyone I serve it to RAVES how good this is. I'm ashamed to admit how easy it is! I don't always use a bread bowl, sometimes I just bake it up in a pyrex dish and it works perfect with pita chips!

Creamy Rice Pudding

I didn't use as much milk as was called for, I ran out!, but it turned out GREAT! I also didn't use all the sugar called for. I did add in some freshly grated nutmeg at the end, which gave it a nice flavor. I used leftover white rice from Chinese the night before :-)

Red Velvet Cake IV

I followed this recipe exactly and my cake turned out GREAT! I had a football mold that I used, so it took a lot longer to bake obviously, so I checked it often. I used a different icing recipe from this site. The cake was SUPER moist and d-lish! Everyone at the party LOVED it. I made is on Tuesday, iced it on Weds and ate it on Thursday and it was great! The mold I have is for 10 cups, and this amount was perfect for it.

Million Dollar Cake

I frequently bring in cakes for my co-workers, and I have never seen one disappear so fast!!! This even got rave reviews from one person who doesn't like cake!!! I followed the recipe, but did drain the pineapple first and kept the juice in a bowl in the event I needed it. The frosting didn't seem to need any more liquid so I did not incorporate it. I also added a box of vanilla pudding to the cake mix, since I do that with all cake mixes anyway. I think next time I'll try it with an orange supreme cake mix.

Molten Chocolate Cakes With Sugar-Coated Raspberries

This is a great recipe!! It's easy to make and tastes like you slaved over it! My friends were really impressed. I used little ramekins to bake them in and got 6 well portioned servings. I think they needed another couple of minutes in (I put them in for 10), but they still were great!

Old Fashioned Paradise Pumpkin Pie

I have never made cheesecake before and must admit that I was intimidated by this recipe. I was interested in making it for thanksgiving but baked a practice one and used my co-workers as guinea pigs :-) They loved it and I did too! Not too sweet at all...it was great. I did add a bit of pumpkin pie spice to the cheesecake layer just to tie the flavors together. I also don't like nuts in baked goods, so left out those and it was still wonderful. Since it was a practice run I used a store bought graham cracker pie shell, the 10 inch one. The pumpkin layer still didn't fit in, I had a bit left over, no worries. I did put the cheesecake layer in the shell and into the freezer for 45 mins and my layers did not swirl. I will be making this for thanksgiving...I can't wait to show it off to my family!

Pumpkin Cake III

I too used the 3/4 cup oil and 1/2 cup applesauce and it worked out great! I added in some nutmeg but next time will try pumpkin pie spice (I just didn't have any this time). I also used the cream cheese icing II from this site and added a bit of cinnamon to that too. I am the cake maker for birthdays in my office and this cake was gone fast! Even the guys that claim they don't like cake came back for seconds! Thanks for the recipe, it's a keeper!
