Zucchini Fritters

Pretty good. I plan on playing with the spices a bit next time. I drained the zucchini by placing it in a colander first and pushing my metal mixing bowl down onto it. I then placed the mixture in a kitchen towel and folded it over, pushed a glass pie plate on top which allowed me to see how much water was being pushed out based on how wet the towel got. I am glad I did the colander first because I could have easily gone through a couple towels.

Chicken Danielle

Good recipe and easy to do. In all honesty, we only did this one because my DD name is Danielle. However, it was good and will do it again. I added a touch of EVOO and garlic/cheese to the linguine before tossing it with the chicken.

Chicken Pot Pie IX

My changes: boiled veggies in chicken broth, added diced cooked potatoes, put a dash of basil, garlic salt, and white pepper to the mix. I mixed the chicken in with the "gravy" mixture of veggies, gave it a good stir and then poured it into the pie plates.

Marinade for Steak I

I have made this marinade for my steaks three times now and will be doing it again for my husband's fire crew (USAFA). I love it! Very tender and yet it doesn't take away the steak flavor. I have used a wide variety of steaks with this, and they all turn out great...except when my hubby left mine on the grill too long and burned it. I was so mad because I had been looking forward to that steak all day...and it was burnt to a crisp. His was done perfectly though...imagine that! I highly recommend this to anyone who is looking for a good marinade.

Best Spanish Rice

I liked it but add mushrooms and cheese to my rice. A resturant in Colorado Springs does it this way and I always loved it, so I was looking for a basic recipe to tweak, this was it.

Quick and Easy Alfredo Sauce

Excellent and resturant quality. Here is what I did differently: I had some extra heavy whipping cream left over from the crab soup I made so I used half milk (skim) and half cream. I also didn't have enough cream cheese, I did have some neufchatel cheese so I used it too. (Again, half cream cheese and the other half nuefchatel.) I also used 2 cloves garlic, not garlic powder. Then I added a splash of basil. I threw in some scallops with butter and garlic in a pan and seared each side for a couple of minutes. I topped each plate of fettucine with a couple scallops and a splash of parsley and served it. Everyone loved it. Great!!!

Meatball Sandwich

Just made these and DH says they are pretty stellar. He said they are so huge that they could be eaten as an open sandwich. I made the meatballs smaller so I too had 24 meatballs. I used left over spaghetti sauce that I had. It was a name brand spaghetti sauce that I had already browned beef up and added to it (with a splash of brown sugar). So my sauce was very hearty. I used mozzerella cheese too. Will be a keeper and DH will be taking the recipe to the fire house.

Pleasant Pork Chops

I am not a big pork chop fan, but had picked some thin p. chops up at the store because they were on sale. This recipe worked fine for us, not an all time favorite meal, but I will be using this recipe for pork chops from here on out. I added mushrooms and green pepper along with the onions though. And I didn't have a full hour to let it simmer, but it tasted good. I also didn't have a bay leaf, so I used sweet basil. So good job Clyde!

Swiss Chicken Casserole I

My kids even like this! I use cooking sherry instead of milk though..1/3 can (the soup can). I also add water chestnuts to it. My 7 yr. old daughter loves water chestnuts so I thought it would appeal to her. I great pot luck pleaser too.

Mango Lassi II

Delish! I tweaked of course, used this as a base. used frozen mangos, probably a cup of yogurt and Sunny D. Whenever I make a smoothie, fruit first, scoop of my yogurt, and then fill it with juice- so the juice covers almost all of the fruit.
