Bob's Slow Cooker Braciole

To those of you who cringe at using jarred sauce you MUST try Patsy's marinara sauce! I'm Italian and one time I just didn't feel like making a marinara sauce even though it's super easy. I tried this and it is killer good and loaded with garlic and wonderful spices. It's all I use now but I don't tell anyone. LOL.

Grilled Mongolian Pork Chops

These chops were packed with such delicious flavor! My chops were 2" thick. Next time I will use chops about an inch thick. I marinated it for 24 hours and cooked it in a grill pan on top of the stove finishing it for 20 mins. in the oven. Very juicy. The mustard sauce was to die for! I will always keep the ingredients for this recipe in my pantry for chops as well as chicken breasts. I also will always keep this mustard sauce in my fridge. It would be so delicious on many foods. The only changes I made were to substitute parsley for cilantro and plain greek yogurt for the creme fraiche in the mustard sauce. Many reviewers stated that the chops were so flavorful without the sauce. While this is true, the mustard sauce really knocks it out of the park! Definitely give this a try.

Chris' Grilled Orange Chicken

I believe that all meats should be seasoned with salt and pepper first before proceeding with the recipe (unless there is a lot of salt already in the marinade). This citrus marinade had no seasoning in it! Of course it's going to taste bland!

Chef John's Chicken and Mushrooms

This recipe is outstanding! I used boneless, skinless chicken thighs which I liberally salted and peppered. I tripled the amount of mushrooms and sauce ingredients. Aside from the tripling of ingredients, I followed exactly. If you're a fan of mushrooms, this recipe is for you! If you love Chef John as I do, try his grilled mongolian pork chops. To die for! BTW, I used cremini mushrooms

Green Bean and Potato Salad

This is a killer salad! Readers who thought this was bland need to remember that you need to heavily salt the potatoes and green beans separately when they cook. Also, salt the ice bath for the beans. I used the baby potatoes and steamed them as well as the beans. Flavor is not lost in the water. I added the cherry tomatoes and black olives which made a pretty presentation. As far as the dressing, I did cut back on the oil and only added a little at a time so it's not swimming in the dressing. Make a day ahead, refrigerate and when ready to serve remove from frig and let it come to room temp. for several hours. Delicious! Potatoes and pasta are the two things that when I make them I do heavily salt.

Sour Cream Noodle Bake

Looks really good. I might try sausage as one reviewer mentioned or ground dark meat turkey. Not a fan of beef. Also I think I'll try it without any meat.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This was out of the ball park delicious! Made as is but added leftover edaname and roasted garlic shrimp. Just mixed everything together. I did add fresh garlic to the dressing. I forgot to add the avocado. I doubled the recipe (there's only 2 of us) and I'm glad I did because I just had some for breakfast. It will be gone by the end of the day. As other reviewers mentioned, if you think that you don't like kale or quinoa it all just blends perfectly and is wonderful. I also just added a lot more of the veggies.

Simple Ranchy Breaded Fish Fillets

Whenever a recipe calls for italian bread crumbs, I use italian panko or plain crumbs and season it up. I love the crunchiness and lighter taste of it. I will use it on halibut or sea bass. After breading it I spray some olive oil Pam on it which gives it a nice brown crust and bake it in the oven. If you're a fan of pistachios, that makes a delicious coating on fish as well.

Marrakesh Vegetable Curry

I've tried this recipe tonight and it was absolutely delicious! Easy and healthy. The flavors really pack a punch. It is a little sweet because of the yam and carrots. It's a thicker soup which is what I prefer and I also added an additional can of chick peas. Based on other reviews, I really kicked it up with a lot of the spices. After I added a lot of the spices and I tasted it, I added even more. Next time I make it I will add crumbled up hot italian pork sausage or half hot and half sweet. Since I'm a big fan of quinoa, I cooked some up on the side and added it to the soup. Delicious and healthy (maybe not with the sausage, but hey we have to indulge once in awhile). Substituting the spinach with kale would be a killer. Enjoy! Enjoy!
