Mexican White Rice

Turned out pretty well. Didn't have a problem with it sticking or being "creamy". Lacked a little in flavor though, so may add more spices next time. :)

Baked Teriyaki Chicken

Made this recipe for a church potluck. Used all chicken legs (more kid friendly). Had approximately 38 chicken legs, and tripled the sauce recipe. The only thing I changed was used about 1/2 to 3/4 regular sugar it called for and added some brown sugar. Took the skin off of the legs, and basted them several times during cooking with sauce. Baked them in 3 pans and used convection. Had 2 pans of them in one oven and 1 in another. Took approximately 1 hour for all of them to cook, on convection. This was yummy and loved the sauce!

Layered Taco Dip

Make this all the time! Especially for my diabetic father-in-law, who shouldn't have the high carbs in beans. I take this also to potlucks and it always ends up gone! I have made it enough times that I know if by heart and can throw it together in 10 min. :) I don't use but one bunch of green onions. As far as the lettuce I buy a small bag of the shredded lettuce and it's about right.

Tuna Noodle Casserole from Scratch

This casserole was great! I wasn't in the mood for tuna, so I used some leftover chicken instead, still was excellent! I could see also using ham, turkey, maybe even beef. :) The kids and husband loved it, and I liked the taste of the homemade sauce. It was a nice change from the usual cream soups sauces. I also added more salt and pepper. This casserole could also compliment many seasonings if you add them to your taste.

Big Soft Ginger Cookies

Awesome cookies! I followed the recipe exactly, even the sifting. They turned out very sticky, so next time will definitely leave time to let them sit in the refrigerator to firm up as others have suggested. The taste is very good!

Rich Chocolate Frosting

Blackened Green Beans

I used canned green beans for this recipe. I made this on Christmas Eve. Put them in fairly early so they would slowly cook all day. Turned out good! Still missing a little something though.

These are awesome! Went over really well. To tone down the spiciness for my kids, I made sure all the of things I used were mild. Including the picante sauce, taco seasoning. I also left out the chilis.

Sloppy Joes II

These were good and my kids loved them! My kids, especially my son doesn't like spicy, and these aren't spicy at all. Very sweet, if you like the sweet kind of sloppy joes. As someone said, the recipe doesn't make a whole lot, so if you are making a bunch of sloppy joes, double or even triple the recipe. Also, if you would like them a little more "saucier", you can add a little water and it thickens up nicely, but keeps a nice sauce.

Pork and Shrimp Pancit

This recipe was good! I used fettuccini noodles instead of the rice noodles, and cabbage instead of the bok choy. It was very filling. The scents filled the entire house, I can still smell them this morning! Thanks!

Barbie's Tuna Salad

This is a good tuna salad! Easy to make. I followed the directions but I doubled the recipe and added half real Mayo(Hellman's) and half Miracle Whip. Yummy! :) Thanks!

Teriyaki Marinade

Wow! Loved this marinade! I used brown sugar and balsamic vinegar like someone else said they did also. I cut the recipe in half and marinated two KC Strip Steaks in it. Yum! I love sweet teriyaki marinades. I cooked the steaks on the grill and basted them a couple of times with the extra marinade, making sure they cooked some after putting on the baste(because the steaks had been marinating in it). Thanks for a great recipe!

Cranberry Upside-Down Coffee Cake

This cake turned out pretty good. I used frozen blueberries instead of the cranberries and used a Pampered Chef Deep Dish Baker to bake it in. It took about 45 minutes or so to cook it in that. Will make again and maybe even try another berry or even some other fruit.

Mmmm...these were yummy! A nice change from the plain old hamburger. The tuna gives it a great flavor. I only used 1 lb.burger and only half an onion. I still may cut down the onion some more next time. Thanks for the recipe!

Baked Pork Chops I

My mom used to make something like this, but the chops weren't breaded. I like the breading, it adds a different flavor to them. These were soooo good! I'm a big fan of cream of mushroom soup, so I really enjoyed this recipe. My kids like cream of mushroom soup too, so they were happy! I doubled the soup mixture, so as to have more sauce, but I didn't use as much white wine as it called for. The pork chops were so tender they fell off the bone! I made white rice with them and steamed broccoli. The rice does goes well with them. Thanks for the great recipe!
