Good basic recipe but I like my more zippy, so I added cheddar cheese, whole corn and jalepenos mixed right in

Gourmet Chicken Pizza

Reviewed: Jan. 28, 2011
This recipe was simple and delicious. Instead of ranch though, I used a packaged alfredo sauce, spread fresh roasted garlic on the crust first and instead of fresh tomatoes, used a can of diced tomatoes with italian seasoning and then added crumbled bacon.

Pear and Gorgonzola Cheese Pizza

Reviewed: Jan. 17, 2011
This is an awesome receipe and so easy to make. My changes were to first bake the crust becuase I like a crispier crust. I also cut corners with a canned pears sliced. it was easier and just as delicious. I also used mozzarella instead of provolone and pecans because that's what I had.

Gazpacho

Reviewed: Jun. 1, 2010
This recipe was great. I did however, not read it properly and missed adding the chopped tomatoes and sugar. Honestly, it didn't even miss it. Also, I skipped the tarragon and basil and substituted lots of fresh cilantro, a tablespoon of Worstechire sauce and a dash of tabasco for some zing. Then I served it in a plastic martini glass, topped with sour cream and a fresh lime wedge. Delicious summertime soup!

Marinated Greek Chicken Kabobs

Reviewed: Jun. 1, 2010
The marinade was great but we didn't think the flavors absorbed into the chicken much. However, I had extra sauce left and served it with fresh vegetables and that was a hit! Great dipping sauce idea.

Sesame Seared Tuna

Reviewed: Jun. 1, 2010
Made this recipe as-is. It was good but not great. The fish and or sauce needed more zing. Next time I'll try sprinkling chinese 5 spice on the fish first.

Slow Cooker Chicken and Dumplings

Reviewed: Jan. 4, 2010
These were better than I expected. I only used one package of dough and thought that made plenty of dumplings and I thickened the sauce with arrowroot.

World's Best Lasagna

Reviewed: Dec. 15, 2009
I read a ton of reviews and modified based on many of the suggestions. I also doubled the sauce and made 2 lasagnes, freezing one for later. It was delicious. Here's my changes: --Used 1/2 hot sausage, 1/2 mild sausage --Substituted 1 can of tomato sauce w/ a can of diced tomatoes --Doubled the fresh parsley & added lots of fresh basil & fresh oregano to sauce --substituted 1/2 the water with a good Cabernet --Added 6 cloves minced garlic --Used an extra cup of ricotta. Added 2 eggs and nutmeg to it. --Used whole wheat noodles, soaked in hot water for 20 minutes. --I simmered sauce for 3 hours, then prepared lasagne. Topped cheese with a sprinkling of Italian seasoning again. I froze one uncooked as is. Simply thaw in refridge overnight and sit on counter 1 hour before baking. Delicious!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 1, 2009
I followed some other recommendations and used all fresh herbs, extra broth, skipped the liver and 2 eggs to bind. I made it the night before and then baked it at 350 for about an hour, mixing once. This was a delicious recipe and my guests commented that it was more like a side-dish than stuffing. The flvors were awesome, I just wish it were a little more bound together instead of crumbly.

Very good. I added an extra egg, 1/4tea ginger powder, 1/4 cloves and 1/2 fresh lemon juice. I also added mini marshmallows the last 10 minutes and it came out delicious.

Greek Chicken

I made the recipe as is but used dried seasonings instead of fresh and used chicken breasts as well. Came out great! I sliced and served it over a greek salad and everyone loved it.

Guacamole

Reviewed: Oct. 1, 2008
Great recipe but don't be fooled by the serving size. I had to double the recipe for 4 people. I also added cumin, which added great flavor. The garlic was really key in this guac recipe. It didn't taste right without it. Finally, I squeezed another half of a lime before serving. Everyone loved it!

Big Al's K.C. Bar-B-Q Sauce

Reviewed: Jul. 7, 2008
Wow, this sauce is pretty fantastic. I'd never made a BBQ sauce before and was very impressed with the taste and the texture. I omitted the celery salt because I didn't have it and I didn't think it was missing. I suggest simmering for 30 minutes and prepare the night before you plan to use it. After 30 minutes, I thought the liquid smoke taste was too strong. but after being left overnight in the fridge, the flavors seemed to meld overnight. It was a true hit.

Cocktail Meatballs I

Reviewed: Feb. 15, 2008
I made the recipe even easier by simply buying frozen meatballs. Can't get any easier than this for a crowd. I also tried strawberry jelly and that worked well too.

This was suprisingly good. I used ketchup instead of tomato sauce and I think that added some additional flavor.

Black Bean and Corn Salad I

Reviewed: Jun. 19, 2007
This was a huge hit. I used fresh corn and fresh cilantro though and right before I served it I added fresh-squeezed lime juice. I think it needed it to doctor up the bottled vinigarette dressing. My non-black bean eaters were converted1
