Baked Flounder with Panko and Parmesan

Really loved this simple recipe! I made it just as the recipe states except the salt. The panko breadcrumbs I had on hand were seasoned and I really liked the flavor along with the parmesan. I baked it for 18 minutes and was perfect. This is a great topping for all kinds of fish that I will prepare often. Thank you for the recipe!

Cucumbers in Sour Cream

My mom always made these and so it's a favorite. I make them the same way as this recipe except I only use a very small amount of sugar, just to taste....like a teaspoon! It's just a matter of taste I know...so thank you TARAWVU for sharing this :-)

Mango Salsa

Delicious salsa! A friend has a mango tree and gave me some so I wanted to try this. I prepared it exactly as written...my son and I like spicy food so I used 1 whole jalepeno with the seeds and oh boy it was spicy! So if you don't care for that, definitely remove the seeds as the video suggests. I served it over grouper and got many compliments....will definitely make again! Thank you IYENGAR21 for the recipe :)

Green Bean and Mushroom Medley

Wow these are delicious! Ok, I followed other reviewers suggestions...minced garlic instead of garlic salt, no regular salt added... and I didn't have carrots...but the beans and mushrooms are so delicious. Only problem is no one is going to want plain boring green beans again!

Pasta with Scallops, Zucchini, and Tomatoes

Wow! I made this recipe pretty much as written and it is fantastic! I made the sauce ahead of time because that's when I had time, but I didn't put the scallops in at that point...I was afraid to cook them and then reheat that they would get overdone. So heated up the sauce & added the bay scallops to cook. This was already awesome just when I was cooking the zucchini! You could just make zucchini this way and it's delicious! Did use just a 1/2 lb of pasta, I used linguine because that's what I had, but you could use any pasta you prefer. Oh and I used a bit more red pepper, we like it spicy. A wonderful, fresh tasting meal that I will make again for sure.

Tzatziki Sauce

I made this recipe as is, with Greek yogurt...and did not like it. It sure did not like my fave Greek restauant's. Not wanting to give up, I read Mrs Summer's review (thank you!) and made it again with sour cream and love it! Now it is close to the restaurant version I think. Also, I pureed the dukes first alone (after letting them drain a bit) and poured off the excess water, then added the other ingredients ....and then just folded in the sour cream. The texture is great, wasn't "runny" at all. Thank u to everyone for all the tips, that sure helps a lot!
