Glazed Lemon Cake

For his B-Day, one of my co-workers requested a lemon cake with lemon glaze like his mother made when he was a kid. After looking at all the recipes here, I chose this one. I made this cake using 1/2 cup vegetable oil and 1/4 cup applesauce. The cake was light and moist. As one reviewer mentioned, the cake itself was not so lemony. But the cake with the glaze was awesome!!Nontheless, it was very good and received an A+ from the recipient...thus 5 STARS!! I will make this cake again!!

Sam's Famous Carrot Cake

After tasting this wonderful cake at my son's house, I baked this carrot cake for a Valentine's Day dinner for 4 couples. I decreased the sugar by using 1/3 cup sugar and 1/3 cup packed light brown sugar. I also omitted the raisins and used only 1/2 cup of the coconut as I wasn't sure if everyone would like the raisins and all of the coconut. The cake was baked in 2-9" round cake pans for 25 minutes. The cake was flavorful and very moist and was enjoyed by all with many compliments. I will be making this cake again!!

Zesty Slow Cooker Chicken Barbecue

This is such a simple and delicious crockpot recipe with ingredients that most eveyone has on hand. I used Sweet Baby Rays BBQ sauce because it's my favorite anyway. I also added 1/2 tsp. each onion and garlic powders. I cooked the frozen chicken breasts for 5 hours in the crock pot on low. I couldn't believe how tender the chicken was. My son ate 2 servings and my grandaughters cleaned their plates!! I'll make this recipe again but next time, I'll try shredding the chicken for sandwiches. Excellent recipe!!!

Amelia's Tuna Macaroni Salad

I made this recipe using a 12 oz box tri-colored rotini noodles and 2 cans tuna fish. I don't care for straight mayo so I used 1/2 mayo and 1/2 light Miracle whip thinned with some sweet pickle juice and added extra pickle relish. It was still a little too dry so I added additional mayo/Miracle Whip to my liking. This recipe made alot which I shared with my neighbor. She called me the next day and asked for the recipe!! Great for lunches and quick summer suppers!! I think I'll keep this recipe and make it again.

Baked Ziti I

Another 5 stars!!! I made this recipe as directed using penne pasta. I was thinking there would be too much pasta and it would be dry but there was plenty of sauce. Even left-overs heated up in the microwave were still as good. I'll be making this again!!!!

Elaine's Peanut Butter Cookies

I gave this recipe 5 stars for the peanut butter flavor of the cookie and the easy method of using a cake mix. I also added 1 1/2 cups of peanut butter as well as 1 tsp vanilla. I'll consider using the extra egg the next time to see if it makes any difference in the crumbly-like texture. I was pleased that there was not an after taste of the yellow cake mix. I will make these again!!

Very Easy Shrimp Dip

I'm not a huge fan of shrimp but this shrimp dip is very good. I used 2 cans of shrimp mixed with 1 bottle of zesty chili sauce. I also added approx. 1/2 cup sour cream to the cream cheese for a better texture and for the ease of spreading/scooping. Top this dip off with 2 cups of shredded mild cheddar cheese and use Tostito brand "scoops" for scooping the dip....YUM!!

Award Winning Soft Chocolate Chip Cookies

This is the only C.C. cookie recipe I use. Chewy, moist, yet cakelike. I use only 2 cups of either chocolate chips, mini chocolate chips or M&M s and only 1 pkg of the instant pudding. Makes lots of cookies, so I keep the cookie dough in the freezer to bake as desired.
