Coconut Macaroons III

I followed the recipe exactly as written, and am not at all disappointed. I did use sweetened flake coconut, since that was what I had in the house -- but I think that was the intent here, anyway. I also refrigerated the dough for a couple of hours before scooping it out (didn't intend to, just had to stop for a kid emergency). These turned out great. Didn't stick to the parchment. Were great warm from the oven, and almost better the 2nd day. The only thing I think I'll change next time is to bake them a little longer (as others have suggested) to bring out more of the toasted flavor.

Blue Cheese Chicken Wing Dip

Went over very well at my party. The only change I made was using 2 cans of chicken breast, instead of cooking the real thing. So easy - and still made for a popular dip.

Parmesan and Basil Chicken Salad

Have made this several times and always get requests for the recipe. I have added chopped red onion for texture and even bowtie pasta (for a party when I knew this wouldn't go far enough). Even my kids (ages 4 & 2) love this.

Hasty Chocolate Pudding

OH MY GOD! This is a chocoholic's dream! I can't believe how easy this is. I added the butter, as others had suggested + a dash of salt. I think next time, I might also add some cinnamon (for a Mexican chocolate flavor).

Hot Pizza Dip by 3-A-Day™of Dairy

Angie's Perfect Dinner Rolls

I made these for Easter dinner and have craved them every day since. I love a yeasty roll! I made a half recipe (using 1 envelope of yeast) and still got 24+ decent-sized rolls. The only other change I made was to let it rise only twice in the bowl, and then once after the rolls were formed. Didn't notice anything lacking, and saved probably an hour's time.

Herbed and Spiced Roasted Beef Tenderloin

Made this for Christmas dinner. Got good reviews from the family (not young kids). However, I could not get the rub to be smooth enough in the food processor. This should have been done in a spice grinder or w/ mortar & pestle. As it was, we had to scrape rosemary from the servings.

Bread Pudding

Finnish Pulla

I had never heard of Pulla before, but this recipe sounded good. And, I'll tell you I was not at all disappointed. This was not hard to make (as yeast breads go), and is fantastic as a breakfast bread. Cardamom is my new favorite spice....

Sauteed Garlic Asparagus

Have made this a few times. I agree with other reviewers to sub evoo for half the butter. My family is nuts for garlic - and this was a great way to spice up asparagus. Definitely a step up from steamed.

Fudge Puddles

I was so excited to see how these came out. They were not as complicated to prepare as I thought. I mixed the dough in my food processor, melted choc chips in the microwave, and got to use my favorite pampered chef gadgets (tart tamper, and trigger-type decorator). My amounts came out almost perfectly. I had maybe enough fudge left over to fill about 2 more cups, but not enough to worry about. This will definitely become a holiday gift regular for me.

Slow Cooker Spare Ribs

I had to fight my 10 year old son away from the crock pot so I could get these on the plate. HUGE hit at my house. Ribs fell off the bone. Will definitely do this again.

Orange Meltaway Cookies

I followed the recipe exactly, and I have to say I wasn't wowed. These make decent butter cookies, but not very orangey. I would add more orange extract next time. They are really simple to make, going together really quick.

Creamy Au Gratin Potatoes

Hard to go wrong with this. Have made it muliple times. I experiment with different add-in flavors (garlic and basil are our favorites). I usually double the recipe so we'll have leftovers later in the week. [It's almost better the next day...]

I could only find cranberry juice cocktail (which already has sugar), so I decreased the amount of sugar added (to about 1/2 c.). This was great. I served it at a party with lime wedges.

Pad See Ew (Thai Noodles with Beef and Broccoli)

Pad See Ew is my favorite dish to order in a Thai restaurant. This turned out great. My kids (8 & 11) thought so, too. I added sliced mushrooms to this (to use up some in my fridge). Leftovers were great the next day.

Strawberry Lemon Trifle

Broke the unwritten rule about making a recipe for the first time to serve to guests. This was fool-proof! Potluck bbq guests raved and requested this recipe. I added a layer of whipped topping, but it would have been great even without it.
