Bread Pudding II

I love this recipe! I love sweet bread pudding and this one is it! I use an iced fritter bread from my local bakery to make it even better! The only thing I changed was the amount of bread used. I use enough bread to soak up all the egg mixture, which tends to be well over the small loaf of bread from the bakery!

Easy Mint Chocolate Chip Ice Cream

This was declicious! This is the first recipe I have made with my new KitchenAid ice cream maker, and it was so easy. No cooking-just mix and pour. My whole family loves chip and mint and this is wonderful. I prefer a lower fat version so I will be tweeking this recipe in the future. Will give updates.

Linda's Monster Cookies

I really liked these cookies. I went with some suggestions and substituted the margarine with peanut butter, otherwise I left the recipe the same. It gave it a hint of PB without being overpowering. My family gobbled them up! Cookies like these are why I don't bake anymore unless I'm baking for church or something. I couldn't stop at just one!!

Disappearing Fruit Dip

I really loved this recipe. I added more lime to my liking. I also gave it a few drops of green food coloring- I had a fruit dip assortment and wanted to tell them apart. I tried to use a real lime, but it would not juice, it was so hard. I rolled it, I heated eat, and nothing. The juice buds would not break. So I used bottled lime juice instead. Worked great. Will make this again.

The Best Rolled Sugar Cookies

Very good! I just sprinkled with colored sugars, I like mine simple, and they were very nostalgic of my Grandma's cookies. Very good, classic recipe.

Best Big, Fat, Chewy Chocolate Chip Cookie

Delicious! Although I think the chewiness comes from the size of the cookie and oven temperature. I was able to make this deliciously crispy and golden brown by reducing the size of the cookie. I used a #40 medium scoop from a home kitchen show company, but you can find that size at any kitchen store. I also raised the temp to 350 degrees and cooked them for the same amount of time, using air bake cookie sheets (they don't burn the bottoms of the cookies), until completely golden brown. I also took the advice of others and reduced the chocolate chips to one cup, which was more then enough for this recipe. Just goes to show you can have a totally different result in consistency just by making a few technical adjustments. Overall, I will be adding this recipe to my files. Thanks!

Chicken Fried Chicken

Yum-O! I will never buy frozen chicken strips again! I only had Ritz crackers on hand, and they gave such a smooth crunchiness to it, it's hard to explain. Experiement with seasoning, it's all a matter of preference. I used salt, pepper, garlic powder, and Lowry's. Dredge in flour first; it helps the egg cling to the meat.

Peanut Butter Balls II

These were delicious! I used a size #60 scoop(small scoop from The Pampered Chef) to make perfect 1 Tbsp. balls. But I felt the chocolate was too thick and would melt on your hands, so I added a half a bar of parrafin wax to the MILK chocolate chips (don't care for semi-sweet). They melt in your mouth, not in your hand! Does anyone know if these freeze well???

Oven Roasted Potatoes

Delicious. I knew I wanted to make roasted potatoes for supper tonight, but wasn't sure what spices to use. This recipe was a great guideline to work with. I added more salt and pepper, and extra EVOO to prevent drying. Will definately make again.

Chocolate Chocolate Chip Cookies I

I really like this cookie. But I used half sugar/half brown sugar, like my traditional c.c. cookie recipe. I also baked them at 375 degrees instead of 350, as I do not care much for chewy cookies. Will definately be making these again!

Wild Rice Salad

I make this salad all the time! I love it! Make sure you use light or fat free mayo, regular gives it less flavor and a more greasy feel to it. I add a tad more sugar and use cider vinegar. Another great variation is to add mandarin oranges and cranberries.

Kickin' Meatballs
