Slow-Cooker Chicken Tortilla Soup

Flavor is okay but seemed too watery and it overall didn't wow me. It was fast and easy to prepare in the morning which is great, but I have other favorite taco soup recipes that I'll stick with. I'd also recommend adding beans to add more substance to the chicken and corn.

Pumpkin Pancakes

I also used Aunt Jemima pancake mix like one reviewer did and it turned out great! Whole family loved it! I'd probably add more of the spices for more flavor but my four young kids and husband all loved it! It made just enough pancakes for us.

Indian Rice Pilaf

Flavor is delicious, but I did substitute bouillion/water and added salt to the water to be boiled. I paired with Easy Indian Butter Chicken here and rated that recipe too. This recipe made sticky rice, not finely separated Indian rice we're used to in restaurants. Next time I will toast rice in some butter or oil and boil bouillion salt water separately to add to it and see if that solves the sticky rice outcome. Serving size was right on. My four kids under 10 asked for leftovers in their lunches so I had to forgo my own leftover hopes. Next time I will double the rice.

Easy Indian Butter Chicken

First Indian recipe that passed husband and kid under 10 approval! YAY! I didn't find garam masala in my local store here in Germany so I used the allrecipes recipe for making my own. I also substituted one can of coconut milk for some of the cream. I loved it, my husband wants to try it with the cream. I did put in a bit more cayenne and garam masala for fear that it wouldn't have enough flavor. I paired it with an Indian Rice pilaf recipe here too. I'd say this feeds 6 if feeding my typical portion size, feeds 4 if serving restaurant portions or "seconds." Kids asked for leftovers in their lunches and there was enough - but my kids aren't big eaters by dinner time.
