Pumpkin Gingerbread

Fantastic, fantastic, fantastic! I have made this 3x in 2 weeks to give to friends, for company, etc and it will be my go-to quick bread recipe all autumn/winter long! the only things I changed the second time (original recipe = 5 stars) that I thought improved it were I changed the sugar to brown, used 1.5x the spices and replaced the water with apple cider. Next time I plan to try a 50/50 mix of oil and applesauce to cut down on the fat a bit. Definitely amazing!!

Grandmother's Buttermilk Cornbread

This recipe is INSANE!! It's quite sweet and rather cake-like but was the perfect compliment to smoked bbq ribs and baked beans. I made it at the cottage for my husband's family reunion and there wasn't a piece left. It was baked in a cast iron skillet (preheat skillet in oven, add 1-2 tbsp oil or butter, allow to melt, swirl pan to coat bottom, pour in cornbread batter and return to oven, cooking for 25-30 minutes or so)... it produced beautiful crust. Also added 1 can (drained) of corn kernels. Excellent, excellent, excellent. My years long quest to find the perfect cornbread is now over!

Banana Crumb Muffins

This recipe is simply divine... and I've never even tried the topping! They turn out so moist and flavourful... I'm actually eating one right now :) A few suggestions that I like to do, I always do half whole wheat and half white flour and cut the total amound back to 1 1/4 cup then add 1/2 cup quick cook oats. I also only add 1/2 cup (brown) sugar. Add ins that are amazing: frozen wild blueberries, mini chocolate chips, chopped pecans or walnuts. Delish! My husband won't bother with any other muffin.

Blueberry Cornmeal Muffins

Quite a good little recipe! Some quick mods I've developed over the 5 or so times I've made these:... 1)used buttermilk instead of plain milk... 2)reduce butter by 1/3... 3)in additon to blueberries, I added chopped frozen raspberries... 4)used whole wheat for half of the flour... They always turn out perfectly!

Beautiful biscuits - very good and very easy. I often use this versatile dough to make some simple variations: Red Lobster-ish cheddar: add 1 cup or more of grated cheddar cheese and 2 teaspoons of Italian seasoning to the dough. Spoon the dough onto parchment lined baking sheet and brush with a mixture of 1/3 cup butter, 1 Tbsp Italian seasoning and 1-2 cloves minced garlic. Bake as directed. Strawberry Shortcakes: add 1-2 Tbsp more sugar and a pinch of cinnamon to the recipe. Bake according to directions then cool. Once cool, split and fill with sweetened whipped cream and sliced strawberries. so good!!

Aunt Teen's Creamy Chocolate Fudge

Easy, tasty, just what I was looking for! Very easy to make additions (i.e. chopped nuts/candy pieces). This fudge sliced beautifully and held its shape... everyone raved!

Best Lemonade Ever

Oh so good and refreshing! I just got married a few weeks ago and this was served at our high tea between the ceremony and reception. It was a hot day and everyone RAVED about it, it tastes wonderfully homemade. Few changes, we added a splash of cranberry juice (makes it pink) and a few sprigs of bruised mint to make it extra refreshing. delightful recipe!

Clone of a Cinnabon

I knew when the dough was the silkiest i have ever seen that this would be a winner... better than cinnabon!!! i changed the topping by first icing as instructed then spooning caramel over each bun and sprinkling a generous amount of chopped pecans before swirling a brown sugar based icing over it all... rich, gooey and sinfully divine!

Butternut Squash Bisque

This soup was outstandingly delicious! i'm not so much of a soup person but love squash so i thought that i'd give it a go and am so happy i did. few notes, i made a quadruple batch and as one user suggested, used leeks instead of onion. i also added 3tbsp light cream cheese while i was blending the soup instead of cream... made it very silky and rich!!! thanks for such a fantastic recipe!
