Healthier Eggplant Parmesan II

This makes a huge amount of food! I cut the recipe to three serving, but easily have five here! I don't mind, though, since this combines some of my favorite things. Very good...but I am glad I cooked it at 425°. Made the eggplant tender but not squishy.

African Sweet Potato and Peanut Soup

More like 3.5. I made it as directed, replacing the water with half chicken broth and half veggie broth. It was birding, so I doubled the peanut butter and kicked up the spice. Still enh..but once I added the cilantro? Wow! The cilantro really makes the soup. My husband talked about "next time you make this," so I guess I will be making this again. Paired it with Asian glazed carrots, also from this site. A good match.

Brazilian Fish Stew

Fabulous! Since I am allergic to coconut, I used sit milk instead and that worked out really well. I reduced the amout of bell peppers to 1 red pepper and 1/2 yellow (for am amount for 3). The stew was flavorful and spicy, and I am a fan of the way the tilaoia flaked!

The Ultimate Summer Fruit Soup

Six servings? This made more like 12! That was a surprise; thank goodness the soup is do tasty! I am allergic to honeydew melon, so I took a risk and replaced it with 1/4 of a watermelon. It gave the soul a bit of a pleasant tang. Delicious! And healthy enough for my husband, who cannot have high fat or cholesterol-heavy food!

Chicken, Rice, and Green Bean Casserole

Since my husband and I don't like mayonnaise, I used plain Greek yogurt instead. My husband thought this was terrific. I found it boring and way more work than it was worth. I give it three stars, but he'd give it more like 4.5
