Cauliflower Soup

Orzo with Chicken and Artichokes

This is a very good recipe and comes together quickly! I didn't have any cooked chicken on hand so I marinated cubed chicken breasts in greek salad dressing then grilled them. Deeelish! I agree, too, with others who suggest cutting the orzo by half.

Scott Ure's Clams And Garlic

Splendid recipe - the broth was sooo flavourful. I'd never cooked whole clams before, so didn't know how long they might take to open. My littleneck clams took about 5 minutes. I should have added the butter around the 3-min mark, I think. My only other recommendation is to have wine for the sauce AND for the cook. But I bet most of you already know that. ;)

Crunchy Oven Fried Tilapia

While some reviewers have noted a lack of flavor, I think this recipe makes a good substite for deep-fried fish (which doesn't have much seasoning). We enjoy it, and it's become a low-fat staple in our home.

Fabulous Wet Burritos

Excellent recipe! For a lower-sodium version, I make refried beans from dry beans, and use homemade chili (again with dry beans) for the sauce. It's a little extra effort, but worth it if you have to watch your sodium intake.

Stuffed Shells I

Awesome filling. I whiz the whole mixture in my food processor to get a great texture. To fill the shells easily, scoop all of the filling mixture into a zipper bag. Just snip the tip off one corner of the bag and squeeze the mixture out of the hole into the shells. Much tidier!

Sweet Sesame Mahi Mahi

I was a little more excited about the thought of this recipe than its result. Still - it's solid, but with a few cautions. First - add the lime juice carefully and taste. You'll need more or less depending on how sweet your pineapple is. My pineapple was pretty tart, and the addition of lime juice (in that quantity) made the salsa a little too sour. Also, a little seasoning is in order. Salt and pepper the filets before pressing in the seeds. Otherwise, it's a solid recipe and very light.
