Tasty Lentil Tacos

Reviewed: May 26, 2011
This was really good. Even my 11 yr. old son thought this was yum (he was suspicious at first). Didn't have oregano and didn't want chili for the baby, so I added more cumin, used veg. broth, and some more salt. Excellent - thanks for sharing!

Savory Cheddar Zucchini Muffins

Reviewed: Aug. 16, 2009
Ours were a little gooey, but my whole family loved them & ate them up! I used a strong, white cheddar and added yoghurt (in place of milk) for some thickness. We let them brown quite a bit on top and they get better if you let them set for a while (it is tempting to eat them fresh from the oven). Turn the oven off, crack the door and let them firm up a bit - it works great. Great recipe - thanks for sharing!

Lasagna Alfredo

Reviewed: Aug. 15, 2009
I thought this was excellent! We sauteed the chicken in a butter/garlic combo and just made a white-parmesan roux from scratch (instead of jarred alfredo sauce). My family loved it! Added some sauteed red onion for color, didn't have spinach so we used mangold and mixed up the cheeses a bit - little cheddar, parmesan, gouda, etc. Thanks for sharing!

Mom's Zucchini Bread

Reviewed: Aug. 3, 2009
I thought this was excellent! I used an extra large zucchini, de-seeded, and did NOT drain the moisture from the zucchini. I added the crumb topping - (yummy) about halfway through and as I had thicker pans, mine baked for well over an hour. I added a little cream to the batter to loosen it up. Received MANY compliments! Thanks for sharing.

Walnut Brownies

Reviewed: Jun. 22, 2009
They were pretty good. I doubled the recipe and used what I had on hand - cocoa powder, 2 whole eggs instead of egg whites, and a little whole-wheat flour in there for fiber. Overall, really good, but it dried out a bit after it cooled down. Best eaten 15 min. after removal from the oven.

Special Rhubarb Cake

Reviewed: Jun. 19, 2009
I thought this cake was amazing!!! Made a few substitutes, due to lack of specific ingredients & taste - will share the following: 1. substituted whole, plain yogurt for the buttermilk 2. Added couple dumps of ground cinnamon to cake & topping 3. Spread a layer of chopped walnuts underneath crumb topping 4. (Sauce) Substituted cream for the evap. milk, pure maple syrup for the sugar, and accidentally melted butter/syrup first. Added cream & vanilla. Turned out AMAZING!! HIGHLY RECOMMEND! Thx for sharing.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Dec. 19, 2007
The Best! I CANNOT stand cakey-cookies and these were not the least bit cakey. These were fabulous! I did let them rest on the sheet, but they still hardened by the next day. Doesn't matter - they were great!

Pumpkin Rolls II

Reviewed: Nov. 10, 2007
I thought these were fabulous! I didn't know what "cake yeast" was (still don't), so I used regular. These went fast! Soft, moist, and perfect with some butter and a mild, white cheese! Yum!

Pumpkin Cream Cheese Muffins

Reviewed: Oct. 17, 2007
I have to rate the right down the middle. The recipe is a wonderful concept - but, it is VERY time consuming and difficult to tell if they are done. The first batch was underdone and the second was a bit better. Used pumpkin pie spice. Husband ate them all up...

Cake Mixes from Scratch and Variations

Reviewed: Oct. 17, 2007
I like making things from scratch (you know what you are eating). This recipe worked EXACTLY the way I needed it to. I omitted the shortening and used butter instead. Thanks so much for submitting! Five Stars!

White Cheese Chicken Lasagna

Reviewed: Apr. 14, 2007
Excellent! I used 2 cups of homemade chix. broth, LOTS of garlic, Italian seasoning, and whole wheat flour. I also used fresh spinach, only had 1 cup of ricotta cheese, and substituted 1 cup of the milk with heavy cream. My family ate it up! Thanks for sharing!

Chicken Fettuccini Alfredo

Reviewed: Feb. 20, 2007
I was very suprised at how wonderful it turned out! I was out of milk, so I had to substitute with soy ...it turned out excellent. I think the monterey evens out the strength of the parmesean. Be sure to use fresh parmesean! Thank you for sharing this recipe!

Chicken Alfredo

I added the garlic and parmesan like the others, but it still needed something sharp to it. I used whole milk and added more than the recipe called for. Overall , a good recipe. Thanks for sharing!

Broiled Tilapia Parmesan

Reviewed: Dec. 22, 2006
The broiled tilapia was excellent. I used a little too much lemon juice - still with the 2TB. I still thought it needed something - minced garlic, maybe? Will definitely use this recipe again and experiment.

Mary's Sugar Cookies

Reviewed: Dec. 16, 2006
I thought these were excellent! I only chilled the dough for an hour (ran out of time), but they were perfect! You can make them a little thick if you enjoy soft cookies or roll them out thin if you like them crispy. I followed one reviewers advice and used a heavily-floured surface - it worked! Enjoy!

Beef Stroganoff III

Reviewed: Dec. 9, 2006
It was a pretty good sauce. I followed some of the other reviewers advice and used cream cheese and white wine. I used shallots instead of teh green onions and chopped 4 cloves of fresh garlic - I love garlic! However, I thought it could have used some ketchup...Overall, a good recipe and thanks for sharing!

Turkey Brine

Reviewed: Nov. 23, 2006
We read all the reviews and took a little info from each review. The turkey was a success! We used 1/2 broth and 1/2 apple juice as suggested, but we added some red grape juice and broccoli broth from some steamed broccoli earlier in the day. We added a cinnamon stick and some fresh rosemary. **IMPORTANT NOTE: We studied about the different types of salt to use(there were a lot of comments about the turkey being too salty). If you substitute the sea salt for kosher - it is twice as strong and its as if you are doubling your salt content. BE SURE to use sea salt and if you are using KOSHER salt - cut the the amount in half. ** We used one full cup of sea salt for a 22 lb. turkey and was perfect. The gravy was also out of this world!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 23, 2006
This stuffing was awesome! I have a vegetarian friend, so I substituted the meat with Morning Star Farms breakfast sausage patties. I used vegetable stock and golden raisins (I ran out of the dried cranberries). The stuffing was a hit! I also used wheat bread for the whole thing - I do think that althought it was the healthiest thing on the menu, it didn't lack in taste!
