Quinoa and Black Beans
The recipe as listed is good, but a tad too bland for me. However, it's a Fabulous base recipe to doctor to one's liking. I added bell peppers & extra spices. It's fantastic with chicken ( that I marinated in lime juice, chili powder, cayenne, and dash of Worcestershire & chipotle Tabasco).
It works well as main dish, side dish, served hot or cold. highly recommend. great on top of salad with diced tomato & avocado, too. versatile & delicious.
