Burrito Pie
Excellant casserole! If I was making for just myself, I would definitely kick up the spice scale. My wife can not tolerate "spicy" though, and by making according to the recipe was mild enough for her. Only changes, I omitted the olives(don't like them), added a tablespoon of cumin, and layered bottom of dish with crushed tortilla chips and shredded cheddar cheese(instead of colby). I also topped the dish with the crushed tortilla chips & cheese. Try some Franks Chili & lime Red Hot on top with sour cream smeared on. YUM!

Hummus III
Absolutely delicious! I cut garlic back to one clove, I love garlic but two cloves was a bit strong for most peoples taste. I added fresh ground pepper, 2 tsp of paprika , 1 tbls of dijon mustard, and 1 tbls of honey to mixture. Everytime I serve this everyone wants the recipe. This is a great recipe to easily change flavors, try green onions, chives, red pepper, and dill for some alternatives. Try subing lime for lemon juice; cilantro for parsley; and throw some cumin in. Yum!

Better Than Best Fried Chicken
Easy recipe, tasted excellant. Very moist chicken. I only changed the flour mixture, didn't seem like enough to coat the chicken. I used 1 cup of flour and 1 cup of starch, 2 teaspoons of each, paprika, sea salt, garlic powder, and onion powder. I did not salt the soup mixture. Cooked in Fry Daddy instead of skillet. Was delicious!
