Quinoa, Beet, and Arugula Salad

This was perfect. I made it exactly as written and it was a total hit! I am eating it again today for lunch! It held up well since i made it last night.

Zucchini Saute

This recipe was very good. I left out the green pepper because I didn't have one at home. I did not peel the zucchini first because I was afraid it would get mushy. I also used a can of diced tomatoes because we didn't have any fresh. I used brown rice instead of white so I let it simmer longer and used about 3/4 cup of water. I made this last night to bring to work for lunch and it was perfect. The flavor is so fresh.

Vegetarian Chickpea Sandwich Filling

This was so good and filling. I omitted the onions (personal preference) and added carrots instead. This was easy to make and tasted great the following day.
