Chocolate Covered Strawberries

This is perfect. I don't have a double boiler so I just use a smaller bowl inside of a pot of boiling water. A tip though...you have to be quick with this. Start dipping as soon as the chocolate melts and keep whisking now and then to smooth it. You can also put the leftover chocolate in the microwave for quick dipping. Works fine. I LOVE it.

Brown Sugar Meatloaf

One big change, I use ground turkey instead of beef and I think it makes a world of difference in this particular meatloaf. I also use fresh bread crumbs instead of crackers. So yummy. Thanks for the recipe!

I love this recipe. I didn't change it at all but you could leave out the mayo and steak sauce and still get some yummy chicken. Very good!

California Grilled Veggie Sandwich

This has become one of my favorite quick and healthy meals. I do mine a little different. I grill up squash, onion and red pepper in a grill pan. I take a fresh french loaf and half it to make two rolls. I spread the mayo mixture on, layer the veggies and then top with the crumbled feta. I wrap it up in foil and bake it for 15 min at 350 degrees. Awesome!!!

Ricotta Stuffed Squash

This didn't turn out as yummy as I had hoped. I love squash but I think another squash besides yellow would work best. It wasn't as creamy as I wanted it. A smoother squash would likely have made the difference because the filling was awesome. I definitely loved that it was healthy and vegetarian.

Vegetable Lo Mein Delight

I didn't care for this at all. It was really salty and it didn't quite have that lo mein flavor I was looking for. I'm not sure what would have made the difference. Maybe use less soy?

Balsamic Chicken with White Beans and Spinach

This was actually really good. I was skeptical as I was cooking it and I didn't have to alter a few things, cooking wise but it turned out awesome. I used Healthy request mushroom soup to cut out the MSG. I also cut the vinegar back to 1/4 cup. It was great.

Zesty Slow Cooker Chicken Barbecue

Very yummy. Just FYI, you can cook this quicky by just boiling the chicken breasts (frozen even) and shredded and then adding the sauce. Not quite as good as it sitting all day but still good!

Beth's Spicy Oatmeal Raisin Cookies

AWESOME!! I changed one small part since I didn't have butter flavored shortening I used 1/2 cup butter and a 1/2 cup of regular shortening and it was fine. They are a little strong on the spice, FYI, but I loved them!

Maple Salmon

Honestly, this is awesome. Very easy and has a great flavor. I didn't use the garlic salt (I don't think it would be very good with this--too salty) as the soy sauce adds plenty of salt but I do add an extra clove of garlic. I have marinated it before for a couple hours and it was fine. Thanks for the recipe!

London Broil

This was a great base to go from for me. I changed it a bit...I eliminated the MSG. I used 2 tsp of dried tarragon and 2 tsp balsamic vinegar in place of tarragon vinegar. I use about 2 tsp of salt and a 1 tsp of paprika in place of the seasoned salt. And I used olive oil in place of vegetable. I marinated it for about an hour and broiled it. Very good!

Banana Pancakes with Berries

I really love this banana pancake recipe. I actually only use the pancake recipe, I don't use the berry sauce. I did alter it a bit by adding some extra milk and vanilla yogurt instead of buttermilk, turned out great though! Thanks for the recipe!
