Oatmeal Chocolate Chip Muffins

Great moist muffin base recipe. I cannot have dairy so I was looking for an oil based muffin. This was moist but not overly greasy. I used unsweetened soymilk instead of milk, and increased the chocolate chips to 1 cup (dairy free Chocolate Dream brand). I also substituted whole wheat pastry flour for all purpose flour. Omitted pecans due to nut allergies. Came out excellent. Do not overmix these muffins, so they stay light and moist. Great idea to mix in chocolate chips to the wet ingredients to minimize dry to wet mixing at the end. My three year old daughter, husband and parents wiped these out in 2 days time!

Creamy Chicken and Wild Rice

Good base recipe. I made the following modifications for my lower sodium health preferences: To cut down on the sodium, I substituted 1 cup of homemade bechamel sauce for 1 can of cream of chicken soup. I used reduced sodium cream of mushroom soup instead of the other can of cream of chicken soup that the recipe calls for. I also substituted plain unseasoned wild rice instead of the seasoned packaged one, and added my own favorite dried spices (tarragon, italian seasoning, rosemary). I then added my own amount of salt and pepper. I used broccoli instead of carrots as a preference and used chicken thighs instead of breasts for more flavor. It turned out creamy, flavorful and yummy. I felt good about feeding my family a lower sodium meal.

Sophie's Zucchini Bread

I am of Asian background and do not like breads/cakes that are too sweet, oily or taht have an overpowering flavor. I made some adjustments to this recipe that made my bread come out perfect- a light, fluffy bread that was extremely moist and not too sweet or oily. Decreased cinnamon to 2 tsp, decreased sugar to 1 cup (and changed to pure maple sugar), and decreased oil to 1/2 cup. Increased baking powder to 1 tsp. Added 1/2 cup unsweetened applesauce. Also partially drained the zucchini liquid. My husband and daughter couldn't get enough! Thanks! This will be a regular treat in my home!

Carrot Cake III

Followed the recipe exactly. I am not fond of too sweet or oily cakes and found this to be very sweet (too much for me) and too oily. Nevertheless my husband and daughter ate them all up. I'll probably cut down the sugar and oil next time.

Tomato Chicken Parmesan

I make this all the time and my family loves it! I dredge a little differently though. First I pat the meat dry, dredge in salt n' peppered all purpose flour, tap of the excess flour, dip in beaten eggs, and finally coat with the breadcrumb-parmesan mix to which I add some dried rosemary. The chicken breasts stay incredibly tender and moist when I do it this way. And the added rosemary adds a warm and fragrant touch to the chicken. Wonderfully easy and so good! Thanks for the recipe!

Caesar Salad Supreme

I suggest tossing the romaine in the dressing and not just having it on the side. I LOVE this dressing. Added 1/4 cup of olive oil to the mayo mixture for a smoother texture.

Dog Treats I

I keep on making these and my dog loves them! Its nice coz I know exactly what my dog in eating from them! I make them into all sorts of interesting shapes and even made a few big bone shapes for her to work on (she's a siberian husky) Thanks so much! won't buy store-bought biscuits again!

Award Winning Soft Chocolate Chip Cookies

I CANNOT believe how great tasting these cookies are! Followed the recipe exactly but put a little less sugar, and also tried peanut butter chips and white chocolate chips, which were absolutely wonderful!! They stayed soft for up to the week that they lasted before they were eaten up! Will never use another cookie recipe again!! Thank you!

Apple Crumble Pie

This is a great base recipe! But for the apple filling I added 1/4 cup flour, used 1/4 cup brown and 1/4 cup white sugar and added a dash of nutmeg. I mixed the dry ingredients with the apples before placing the filling in the pie crust. This made for a EXCELLENT "creamier" pie filling. Wonderful crumble top. Used "I can't believe its not butter" on the crumble top and it turned out great. Thank you so much! I have made this 5 times (modified) and people I serve it to can't believe its not professionally made! Thank you thank you thank you.

Baked Pork Chops I

So soft I could cut it with a fork! Unbeleivable! My fiance loves it. Had problems with the breading though. It separated from the meat and was very soggy. Wondering how this could be solved... But still tasty and yummy. Thanks!

Applesauce Bread I

Definitely a keeper, but I made some changes that I think would make for a healthier loaf. I reduced the sugar by half without compromising the sweetness but doubled the raisins, substituted low fat low sugar vanilla yogurt for the sour cream, added 1/2 tsp nutmeg which I think made a good difference, and used whole wheat flour instead of all purpose. Turned out wonderfully moist and yummy, with each slice having a good amount of raisins. Just make sure not to mix wet and dry ingredients too much. Will try adding wheat bran next time for even more healthiness.
