Chicken Tortilla Soup V

The first time I made this I followed the recipe exactly, however I found it to be a little bit bland. It was an excellent starting point, so the second time I made it I just got a little more "creative". I made it in my large slow cooker so decided to add a packet of low sodium taco seasoning and a large can of diced tomatoes. I also decided to add a little more corn and just tasted and worked with it until it was seasoned to taste. I also found that cooking the chicken ahead of time and shredding it before adding it to the soup was very helpful. Adding it already shredded caused it to absorb so much more of the overall flavor, and after cooking several hours in the slow cooker it was very tender. Like I said, it is a GREAT place to start, and from there you can really get creative and make it your own!

Banana Spice Cookies

I don't think I would make this recipe again. The cookies were "OK", but I didn't feel like they tasted good enough to be worth the time it took to make them. I am always looking for recipes to use my over-ripe bananas, but I have found banana bread recipes that I like much better. I made a double batch and increased the cloves and cinnamon by 1/2. It still wasn't enough, and I could hardly taste the spices. The cloves were brand new, and the cinnamon just purchased a few months ago, so it wasn't from old ingredients. I think if I were to make them again, I would TRIPPLE the amount of spice called for. I went ahead and made the butter cream frosting from All Recipes.com like they suggested, which greatly improved the cookie. These cookies are really pretty bland and need to be frosted -- in my opinion they can't stand alone. --SHELLGRAM

Creamy Banana Bread

THE best banana bread recipe I have ever made!! I LOVED the added flavor and "depth" that the sour cream adds, and using the sugar/cinnamon mixture to coat the pan adds SO much! My family absolutely LOVED it. I have never heard them rave so much about my banana bread. Now that I have found this recipe, I think I can toss all the others! --ShellGram
