Cakes are fun but with just the right blend they can become fantastic. This recipe is simple and anyone can bake this delicious cake in less than 40 minutes. Yellow and moist on the inside
and brown on the outside this cake is best served with tea. A perfect blend of cinnamon powder, honey, lemon juice, sesame and mustard seeds. It doesn’t get much healthier and delicious than this.
ü1 ½ oz of margarine or butter of choice (preferably soy based)
ü3 tablespoons of clear honey
ü1 ½ tablespoon of ground cinnamon
ü1 lemon juice and smoothly grated rind
ü½ pint of coconut milk
ü4 oz of plain flour
ü2 teaspoon of mustard seeds
ü2 teaspoon of sesame seeds
ü2 egg whites
Turn your oven on to about 200 C/400 F and allow to heat for a few minutes. Oil your baking pan and place a non sticky baking paper inside. Gently heat your
butter or margarine and honey until melted. Add a tablespoon of lemon juice, and then stir with the lemon rind and coconut milk. Sieve the flour, nutmeg, baking powder and ground cinnamon. Whisk the egg whites till they foam and add it to your mixture. Pour
the mixture into your baking pan and sprinkle mustard and sesame seeds. Bake for 30 to 35 minutes, until brownish gold.
While warm mix the reserved lemon juice and honey together, then pour over cake and enjoy.
