Orzo and Tomato Salad with Feta Cheese

I loved this, I used a small can of sliced black olives. Definitely use fresh herbs, such a huge difference in this recipe. This was brought to a potluck and everyone loved it.

Sopapilla Cheesecake Pie

I followed the recipe as is and it turned out fabulous!! Very very rich, you only need a little square. Makes a lot of food, we didn't finish it before it got soggy, what a shame.

Slow Cooker Teriyaki Pork Tenderloin

I may have overcooked mine because it just fell apart as we pulled it out of the crockpot. More like pulled pork than anything else. I omitted the red chile pepper and used 1/4 tsp. red pepper flakes instead. I cooked this on Low for about 6-7 hours, probably about an hour too long. Served with jasmine rice cooked in chicken broth and steamed broccoli. Family liked it.

Easy Dump Cherry Crisp

This was very good warm from the oven, with some Kirkland vanilla ice cream on top. I added a dash of cinnamon to the topping before sprinkling on the cherries, and used regular unbleached flour. Also only used about 1/3 cup chopped pecans, may leave them out next time. Delicious!!!

Banana Coconut Loaf

This was very very good! I did not use cherries and used chopped pecans instead of walnuts. Delicious! Would love to make french toast out of it next time I bake a loaf.

Strawberry Coffee Cake

So good, warm from the oven! The only change I made was to use half brown sugar, half white sugar in both the cake and the streusel. Delicious!!!

Slow Cooker Pinto Bean Bonanza

These beans were amazing! I didn't use pickled jalapenos and added the green bell pepper right at the beginning. I loved the slight sweetness of the finished beans, almost like baked beans. We had this over jasmine rice. I can't wait to eat leftovers for lunch today with some tortilla chips!

Fancy Fruit Pizza

Absolutely delicious! I didn't change a thing except used different fruits - I used fresh strawberries, a can of mandarin oranges, and cut up a fresh Gold pineapple. The Gold pineapple was by far the best fruit on the pizza. I wish I had covered the whole thing in pineapple it was that good! Delicious recipe!!

Caramel Frosting IV

I have made this twice, but cut the recipe in half so it would ice a bundt cake. I had to use a few extra tsp. of milk to make it a drizzling consistency but it was still absolutely good.

Lebanese Chicken and Potatoes

This was just OK for me. I cut the lemon juice and olive oil in half and it was still very, very lemony. Almost overpowering lemon flavor. It was edible but I won't be making it again.

Cherry-Blueberry Pie

This turned out soooo good!!! I used 2 cups of frozen wild blueberries and put a pie shield on the crust after 15 minutes of baking. Other than that I followed to recipe as is. Tasty, delicious pie!

French Coconut Pie

I don't know what I did wrong but this did not taste good to me. Coconut and pecans are one of my favorite food combos - how can you go wrong? The flavor of this pie was not tasty or delicious, unfortunately. I was expecting something "more" but it seems to be missing something in the recipe? Maybe some vanilla?

Ratatouille

I loved this recipe! I made it with my 5 1/2 year old daughter, thinking it would help her eat different veggies, and she loves the movie "Ratatouille" so I figured she would love this. She didn't end up eating any - but I sure did! There was not a problem with too much juice - in fact there was no juice in mine when it was done. I figured this needed a little more salt but I was not generous with it when we were preparing it so that may have been why. We ate this over jasmine rice.

Grandma Johnson's Scones

I followed the recipe as is, except did not use raisins. The dough was very crumbly, like it did not have enough wetness? I pressed it together as best I could, and made 8 scones with it, they are pretty big and took 24 minutes to cook fully. This is easily the best scone I ever had. Even though the dough was very crumbly, they still came out delicious. I am going to have one with raspberry jam next!

Best Bread Machine Bread

This bread was amazing! The texture was so much different than your usual bread machine bread. My husband ate half the loaf as soon as it cooled off and that's saying something since he's a very light eater. Excellent toasted with butter and raspberry jam. Will be making again for sure.

Mushroom Rice

I made this with olive oil instead of butter, and jasmine rice. Needed more salt than what I added but that was my fault, also used low sodium free range chicken broth from Trader Joe's. Yummy & fairly quick weeknight side dish.

Easy Fusilli with Tomato Pesto Sauce

Made this for dinner last night, I followed the recipe as is, except did not add any salt & pepper and used 16 oz. of fusilli. This was absolutely delicious with some chicken breast tenderloins marinated in Italian dressing then baked at 350 for 40 minutes. My husband went back for seconds, something he RARELY does. We sprinkled some red pepper flakes over the top of ours, really brought out the flavors. I can't wait to eat some of the leftovers for lunch today, maybe with some pine nuts sprinkled on top!

Mini Cheesecakes III

These were so super easy to make. I doubled the recipe to make exactly 12 mini cheesecakes. Cooked exactly 25 minutes, these came out perfect! Can't wait to try with an Oreo crust, and perhaps some raspberry topping. This is my go-to cheesecake recipe now.

Black Bean and Corn Quesadillas

Outstanding! I didn't use brown sugar and added a couple dashes of salt to the bean mixture since my corn was salt free. I used salsa verde, and sharp cheddar cheese. Sprayed flour tortillas with cooking spray and baked in a 350 oven for 15 minutes till brown and crispy. Yummy served with sour cream! Will make again. Easy and delicious!
