Rick's Special Buttercream Frosting

Fantastic frosting, and will be my #1 when I'm not looking for a buttercream. Makes a lot, and I saved every last drop of my leftovers and might just eat it with a spoon, straight from the container!

Cinnamon Pecan Braids

I am about to sit here and eat a whole loaf of this by myself! This is sooo good. A bit time consuming, but worth it for 4 of these. I doubled the filling recipe as well, and while I had some leftover I can't imagine having enough filling with the current recipe.

Sweet Dinner Rolls

People start begging for this when the holidays approach, and then hide them in the pantry so no one else can eat them. Very, very good, and I always double the recipe. I don't use a bread machine either, and have made it a few different ways. Generally, just mixing the liquid and then the dry ingredients works (of course, after letting the yeast sit to foam first).

Sourdough Bread I

Yay, it worked! I used this same contributor's sourdough starter and I am so happy it worked! I prefer this sourdough to the flour starter, because it doesn't get quite as sour or crusty. This bread makes THE BEST GRILLED CHEESE EVER.

Apple Walnut Bread

I had to log in this morning to rate this because it is SO GOOD. It's got an amazing crust on all sides--nice and crackly. I used 1/2 white and 1/2 brown sugar, and probably more apples because I have so many to use up, but other than that stuck to the recipe. So good.

Pumpkin Waffles with Apple Cider Syrup

Excellent waffle/syrup combo! I wasn't sure about making the syrup, but it was so simple, and I can't imagine the waffles without it. I'm sure they would need the tweaking other reviewers have mentioned if you decide to skip the syrup, because it compliments them perfectly. I made everything exactly as the recipe calls for, except I substituted 1.5 cups of whole wheat flour. Very, very good, and I was able to make 5 large Belgian waffles from the recipe. Cooked on setting 5 on iron.

Margaret's Southern Chocolate Pie

Excellent Thanksgiving treat! The only change I made was to use Splenda Blend instead of sugar, following the conversion chart on the Splenda bag for amount to equal 1 1/3 cup regular sugar. Well, I also went the Cool Whip route instead of meringue based on preference of my "audience," but the chocolate base of this recipe is fantastic. My only qualm was that the recipe gives no indication of time needed to thicken the chocolate mix or bake. I estimated that it took 6-7 minutes for the chocolate to thicken, and I didn't bake for more than 15 minutes (had no meringue to brown so no real visual cue for when it was done). Another reviewer had an excellent tip, to use a handmixer to mix in the butter and really smooth out the chocolate.

One Bowl Chocolate Cake III

Fantastic cake, and will be my #1 cake from now on. Made it for my daughter's first birthday, and although she didn't eat very much of the cake since I had so much frosting on it to distract her, I have been eating her leftovers and it's amazing! It's been sitting in the fridge for two days and it's only getting richer and better, so no worries about making it in advance for an occasion. I actually forgot to add the water in my first batch, and I think it turned out better that way--thicker batter, thicker, richer cake.

Pumpkin Cheesecake II

Very good. My first attempt at making cheesecake, and it was so easy and good. I let the cheese and eggs come to room temp as suggested by others, and baked in a water bath. Update: This year I did not use a water bath, but only put a pan of water on the bottom rack of the oven to increase humidity. Not so successful--lots of cracks. Definitely works better with a true cheesecake water bath.

Red Garlic Mashed Potatoes

These got rave reviews at Christmas from everyone--didn't have enough to make sure everyone had as much as they wanted! These were really, really good. I used minced garlic from a jar instead of crushed, but that's the only change I made.

Whole Wheat and Honey Pizza Dough

This is a standard in our house, and it's very good. In my experience it has a tendency to puff up while baking, so make sure it's thin on the pan unless you want deep dish!

Clone of a Cinnabon

I could eat a bowl of this frosting alone! I love these, they are easy to make, and great to eat. My only complaint is that the cooking time is still up in the air. They look to be too brown on top and are still gooey (in a bad way) on the bottom. I have yet to perfect temp/time.

Bry's Chocolate Lamb Chili

Very good chili! The lamb really works in chili and I would have never tried it. I halved the chili powder, because I don't like spicy, and I thought it had the perfect heat--just enough to make your throat tingle. I also thought it was a little bean heavy so will probably cut down on the beans next time, or at least use smaller beans instead of kidney. Even my 1 year old ate a whole bowl (and was up crying at bedtime probably from indigestion, but that's not the recipe's fault!). I love incorporating cinnamon into main courses, and the cocoa and cinnamon blends into this so subtly that you don't taste it directly, it just adds to the flavor.
