Tastes really good...but I had some issues. First, it's a lot less bread-y and more cakey than I expected or wanted. I know there's a fine line between pumpkin bread and cake to begin with, but this was really cakey. Second, it's been in the oven for about an hour and 20 minutes and the center is still mush. I am cooking one loaf, and make muffins out of the leftover batter (which is how I know it tastes great). Even the muffins took about 25 minutes, and we're not talking jumbo sized.
I also didn't have allspice, so threw in extra cinammon, some cloves, and nutmeg. I think a 9x5 pan may be a little large, which is causing my cooking problems.
