Soft Oatmeal Cookies

I am just about finished baking these cookies for the first time. I made half the recipe as written (no variations), and didn't bother chilling the dough. I got 36 small cookies out of it, and must say, they are truly delicious. Nice and moist, chewy, and flavourful! I'll be making these again. And for those who are on Weight Watchers, those 36 cookies are only 1.5 points each!!

Flax and Sunflower Seed Bread

Apple Strudel Muffins

I made two changes due to previous reviews. I added 1 tsp cinnamon to the batter, and I used brown sugar instead of white. I found I needed to add a splash of milk to lighten it up a little. I made a double recipe to make 18 large, beautiful, high topped muffins. And for the taste... FANTASTIC!! I'll test them for doneness a little sooner, as they are just a tiny bit dry. My fault on that, though. Great recipe, Nikki, thank you!!!

Caramel Apple Pie II

I use granny smith apples, and omit the 2/3 cup white sugar (the taffy is sweet enough). This recipe is fantastic!!!!! It's my go-to apple pie recipe, and I get many requests for it. Delicious!!

Chicken Pot Pie IX

I have tried a quite a few recipes for Chicken Pot Pie, but there was always a little something missing or off...until today. EXCELLENT! My husband said it's the best pot pie he's ever had. High praise from an excellent cook himself. I used a rotisserie chicken from my local grocery store. I added about 2 tsp poultry seasoning and a bit of garlic powder. I doubled the sauce, and baked at 325 for 45 minutes, using my own homemade pie crust. No problem with sogginess. Beautiful!!!
