Thai Pumpkin Soup

This has a very nice flavor... not over the top, but a nice thai flavor. I used one dried chili pepper in place of the fresh and it had a nice warmth to it. I also used butternut squash in place of pumpkin. Please note that this makes a fairly thin soup; if you were looking for a bisque consistency you may want to decrease the amount of broth. Enjoy!

Cinnamon Bread Delight

This is wonderful. It seems simple enough, and it is, but it comes together very nicely. Not too high in fat, either. I have to recommend a streusel topping to really kick it up to ultimate: mix oatmeal, flour, sugar, butter and sprinkle on top.

Mediterranean Potato Salad

This was very good, but I made some significant changes. I cannot believe that you would really want to use this amount of feta; it must completely overwhelm the other ingredients. I used about 2 ounces of feta with the other proportions being the same. The other changes I made were as follows: used light italian dressing, added fresh parsley, and dried oregano.

Tomato 'n' Shrimp Pasta

I was looking for a pasta dish with shrimp and red sauce, and this fit the bill. I really enjoyed the flavor of the sauce; it would be nice even without the shrimp. Fast and fresh tasting.

Greek Souzoukaklia

This is very good. I always use ground turkey. Also, I highly recommend that you mix this up ahead of time, preferably the day before, so that the flavors of the spices have time to permeate the meat. It makes a huge difference! I serve this with pita, lettuce, cucumbers, tomatoes, garlic sauce, and tzaziki sauce. Favorite sides are tabbouli and hummus. Yummy!

Singapore Noodle Curry Shrimp

This is good. I added cubed firm tofu at the same time as the onions and peppers, and this was a nice addition. I used less shrimp. Its taste would depend largely on the quality and strength of your curry powder; I had to add extra to give it enough flavor. It was also good with a squeeze of lime juice on it.

Onion Bread II

This is very nice; it rose nicely and has a great consistency. I think it will make very good sandwiches. I even used about a cup of whole wheat. Warning: it makes a huge loaf... it was threatening to overflow my bread pan. Also note that the onion rings will not stay on top with just the butter... if you want this look, you might want to try an egg wash on top.

Millet Muffins

Very yummy! I was surprised how light these were with the whole grain. I made the following substitutions: generous with the millet, substituted half the whole wheat flour with millet flour, used powdered buttermilk, substituted half the oil with applesauce, and for extra flavor added a splash of vanilla and mini chocolate chips.

Millet Delight

Good. I didn't have soy milk powder, so I used 1 c vanilla soy milk and 2 c soy water. (I halved the recipe.) I liked that it didn't have any added sugar, other than the fact that my dates were sugar-coated and I used sweetened coconut. It was sweet enought to eat as it without adding sugar or syrup.

Italian Love Cake

For the ingredients involved, this should have been much better. Maybe it was the fact that I used fat-free ricotta, which made the center kinda dry and not as creamy as I had hoped. It seemed to lack flavor and richness. Okay, but I won't repeat this again.

Honey-Oat Pan Rolls

These are very nice. I didn't follow the directions; instead I mixed them the way I usually do (dissolved the yeast in water, etc), and I let them rise twice. They came out nice and light and sweet. I served them with the honey butter from the recipe on this site.

Proper English Cottage Pie

This was very good, but not earth-shaking. I agree with other reviewers on several points: (1) Though cinnamon can add a nice element with red meat, here it comes through too strongly; cut back quite a bit on the amount. (2) Use less milk in the potatoes - just make them however you usually make your mashed potatoes. (3) I used water instead of beef broth and added some worcestershire sauce because the meat mixture seemed to need some extra flavor. Next time I would go a step further and use some garlic and extra seasonings to perk it up. Enjoy!

Apple Bavarian Torte

Wow... this is delicious! I ended up using only 4 granny smith apples, because that amount arranged in a nice pattern and seemed like enough. I also baked it a bit longer than the recipe says to make sure it had set in the middle. This is delicious!

Greek-Style Stuffed Peppers

Very nice combination of flavors. I didn't follow the proportions of ingredients exactly. I cut the recipe in half but used the full amount of pork and brown rice, but half of the other ingredients. It was about the right amount to fill 4 large peppers. This may be my favorite of the stuffed pepper versions I've tried.

Asian Mushroom Soup

I varied this a little, but kept the essential flavor. I used 3 c water and 2 bouillion cubes, only 2 T soy sauce because I did not have the low sodium kind, and then I omitted the udon noodles and chicken. I added a little zucchini for extra veggies. It has a good flavor, provided you love mushrooms!

Minty Orzo Lentil and Feta Salad

Different from other orzo salads I've made because of the mint and dill flavors, which worked nicely. I like that the lentils gives it some more texture and fiber. I cut way back on the oil and added some lemon juice for extra pizzazz! Also, I halved this and it still made a big bowlful.

Cousin Cosmo's Greek Chicken

Yum! My husband and I really liked this one. For some reason it was significantly better than some similar feta chicken recipes I've tried. I halved the recipe and used one breast and two thighs, also used fresh oregano that I happened to have. I like that it is all made on the stovetop which makes it quicker and means you don't need to heat up the oven! Good served with an orzo salad.

Quick Brownbag Burritos

This is a good bag lunch recipe... easy, healthy, tasty, filling... just what I am always looking for. And it can be easily adjusted to your taste. I filled my tortillas full, so it only made 3 for me (!), and I also added fresh spinach leaves and cut back on the cheese, eating these cold for lunch. The quality of these would depend largely on the quality of your salsa, and you could also perk them up with your faves (extra veggies, lettuce, tomato, cilantro... I'll be trying some variations).
