Caramels

Reviewed: Feb. 3, 2010
Very good caramels! Did not reach firm ball on my thermometer so I had to do the water check way. They came out great. Hard get out of the dish even buttered. Oh and way to much butter. I must have soaked up at least 1/4c with paper towels. So I may try adding a little less & hopefully they'll still come out. I should have used my foldable silicon bakeware and poured it in that because then I could just "pop" it out in one big "brick" and then cut. So good though but this first time was a learning process as to how I can not be working with caramels for 3 hours. Very very very good!

Peachy Bread Pudding with Caramel Sauce

Reviewed: Jan. 20, 2010
I LOVE LOVE LOVE this recipe! I have made it twice and want to eat the whole pan! Yummy! I made the saue with onc with the rum and once without. I personally like it without the rum but it does harden up after awhile. I put mine in a microwavable dish and simply reheated for a few seconds then served over my bread pudding. I actually liked the caramel when it was hardened too. Served it over ice cream and added it on top of warm brownies. Very good recipe! Thanks!

Banana Peanut Butter Bread

Reviewed: Jan. 26, 2009
I thought it was good but I love peanut butter. Real moist. Followed it to a tee~even the time was right. Followed another advice to cover halfway with foil. My fiance didn't care for it but he hates peanut butter.

Simple Whole Roasted Chicken

Reviewed: Oct. 15, 2008
Doubled the spices to rub both sides of the chicken. Followed other peoples advice-put an onion and garlic in the cavity of the chicken. Put spices under the skin-we don't eat the skin. Cooked as directed and it came out very juicy! No smoke in my house like others. Also put celery, carrots, and potatoes around the chicken and let them soak up the juices. The only thing wrong was that one of the spices is a bit overwhelming-Allspice maybe. The potatoes soaked up the juices the best and they were incredible. Will use less of one of the spices, once I figure out which one is too much, each time I make this meal. Will also use more potatoes and less carrots and celery around the chicken just because they were super yummy!

Chicken Breasts Pierre

Reviewed: Aug. 23, 2008
I thought this was really good. I liked mine over the french bread which made it soggy and I got to tastes all the flavors. My boyfriend liked his bread without the juices and he rather soak it up himself. Doesn't make sense to me but whichever way you like it, it's good! We loved it and I'll make it again.

Mom's Buttermilk Biscuits

Reviewed: Aug. 8, 2008
These were okay. I've had better. I made the changes like most others following Elparsons review. The first batch I cooked for about 9 minutes until golden brown-with burnt bottoms. The second batch I cooked for 8 minutes-they were not golden brown and the bottoms were not burned so this batch came out okay. Not the best I've ever had. I think it would make a great chicken pot pie crust or something of the sort. I like mine sweeter so maybe it's missing sugar? Who knows. I'll keep looking for a recipe. Thanks

King Ranch Chicken Casserole III

Reviewed: Nov. 26, 2007
It was okay. My boyfriend and I liked it but we've had better. Too many tortillas! I also took others' suggestions and cut down the broth to only about 1 1/2 cups. Came out with just the right amount of moisture. Needs more cheese (according to my boyfriend)and I cooked for about an hour. I would recommend either covering the corners so your edges don't get too cripsy. I will make again but with less tortillas, a bit more peppers and onions, and more cheese for the bf!

Herbed Chicken Fettuccine

Reviewed: Sep. 18, 2007
Very good! Tasted great! Wonderful flavors. I used salt free lemon-pepper blend. I assumed that's what the recipe called for. I also had to use Knorr Herb & Garlic sauce mix in a 1.6 oz bag but only used 1 oz of the mix. Loved it! Boyfriend loved it! Keeper!

Peach Cobbler II

Reviewed: Jun. 7, 2007
Waaaaay too sweet. I love sweets-can't live without them. But not this much. I even reduced the sugar in the peaches to 1 cup and in the flour mix I out 1 cup. I used fresh peaches so I wouldn't have the worry about extra sweetness with canned. Don't like the crust because it's not. It's a dough. And I only used 1 cup of water to pour over the mixture. The only good thing in this recipe was the peaches. I think I'll pass on this one. Don't waste your peaches.
