My cooking triumphs
My triumph is also my tragedy. Every year for Christmas, I make something new. 2 years ago, I decided to make early grey vanilla chocolate truffles. I had never made them before and decided to give it a go. If you had never made truffles, they are messy. I MEAN MESSY! And, they take forever to set. I started on December 23rd and had to let them sit over night before their second coating. Christmas eve at about 2pm, I start to melt the chocolate in my double boiler. You need to keep the chocolate moving, and so I did. With a spatula. Kept it going..... Enter in friend who comes over to see how I am doing " Tara.... Ummm... Why are you using a stick?" Me " What? Im using my spatula... silly.." Friend: " Are you making swirled truffles?" Me: "No, why?" Friend: " I think you just melted your spatula into your chocolate...." Needless to say, I was out a spatula and my gourmet milk chocolate. ON CHRISTMAS EVE!!! Had to use regular store bought milk chocolate and now use a wooden spoon

Curried Honey Mustard Chicken
The flavour of the curry ( I am a BIG curry fan ) mixed with the honey and dijon was not a match made in heaven for me. Overall, it was just an alright meal. I served this with basmati rice and roasted potatoes.

Best Tuna Casserole
This is a great go to meal if you don't have too much time on your hands or if you are like me and just draw a blank some nights on what to make for dinner. This is great on those chilly rainy nights! The only thing that I did differently was I didn't add any sliced mushrooms ( hubby won't eat them but doesn't mind the mushroom soup) and I added in a touch of garlic. This was great!

Delicious Ham and Potato Soup
absolutely fantastic! I made this the other night for my husband and he had seconds! The only thing I did differently was add more veggies. I added cauliflower and carrots to it to give it a little colour and used half and half cream instead of milk. I also let it simmer for a good hour and kept the skins of the potatoes on.
