Marinated Grilled Shrimp

Very good, thanks! I didn't have tomato sauce, so I used 1/2 ketchup, 1/2 chili garlic sauce; I didn't have basil so I used about 1/8 a teaspoon of Italian seasoning; and I used red pepper instead of cayenne pepper. Came out great!

Spicy Grilled Chicken

I make a very similar recipe, but use chicken tenderloins, olive oil instead of vegetable, and add in 1/2 tsp of chili powder and 1 1/2 tsp cumin. Also up the red pepper to 1/2 tsp. Delicious!

This was a hit at our bbq - thanks! I made as directed, except I took other reviewers' advice and instead of white wine vinegar I used raspberry vinaigrette with a touch of balsamic.

Brooklyn Girl's Penne Arrabiata

So good! I followed the suggestions, and served the chicken separately. I used one egg, but all the breadcrumbs - and I was happy I did, since it was just enough. I used panko breadcrumbs for some added crunch, 1 tbsp red pepper flakes, and added onion and garlic powders to the sauce. It was so good, that I'm eating just the pasta (no meat) as leftovers - and I never eat meatless meals! Thanks!

Pasta Hot! Hot! Hot!

yum yum yum yum yum! I added about 2 Tbsp butter, some oregano, 1/2 tsp salt, 1/2 tsp pepper, and about 1 extra tsp of crushed red pepper to the garlic, EVOO mix. Also threw some Italian bread crumbs onto the pasta. The parmesan is key. This was SO good! I'm going to try it with the marinated grilled shrimp from this site, which is also amazingly good!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I don't like anything with carrots, so I didn't eat these myself, but I'm reviewing it based on the raves I got from the picnic I took them to. I halved the icing recipe, and still had quite a bit left over, and I forgot to add the heavy cream, but the frosting was still delicious! I also got feedback on how moist they were. The only strange thing was that some of the carrots turned green - apparently that sometimes happens to carrot cakes. Anyway, thanks for a great recipe!

Meatball Sandwich

This recipe makes phenomenal meatballs, although I skip a huge step and just buy Classico's Spicy Tomato & Basil sauce instead of making it myself. I also use 3 cloves of garlic, 1 T of cilantro instead of parsley, 3 T Parmesan, 1/4 tsp onion powder, 1/2 tsp chili powder, and 2 beaten eggs in the meat mixture. I also use Italian bread crumbs, and leave out the Italian seasoning. I end up making about 19-20 meatballs, and fry them in 2 T of olive oil for 5 minutes, and then add in a jar of the sauce and let them cook in that for about another 10-15 minutes, until the meat is well cooked. They're amazingly good!

Spanish Chicken and Rice

We LOVE the rice in this recipe, although the chicken was pretty bland. I used about 1 lb. of boneless chicken cutlets, and added 1/2 tsp chili powder to the chicken coating mixture (although it didn't do much good.) Instead of pimientos, I used 1 chopped up jalapeno. When I was adding in the broth, I also added in 1/4 c. of hot salsa. I did leave the dish fully covered. The rice was delicious, but very spicy. I made the rice again a few days later, since it was so good!

Spicy Cajun Shrimp

We really enjoyed this, thanks! I did make quite a few changes though: I doubled the seasonings since I wanted to make 1 lb. of shrimp (although that wasn't necessary since it made so much leftover seasoning!) used 1 tsp salt (4 is ridiculous!), left out the white pepper b/c I didn't have it, added about 1 tsp of lime juice, and threw in about 2 tsp of creole seasoning. I first made them under the broiler, but they broiled very inconsistently, although I left them there for about twice as long as I was supposed to. I made the remaining shrimp on the grill pan, and will make them on that in the future. Thanks!

Overnight Blueberry French Toast

My family loved this, although I messed up the sequence and baked it uncovered first! Either way, I don't think the bread will get mushy in this. I used challah bread, 3/4 cup sugar instead of the whole cup, and 1 1/2 cups blueberries in the layering. I also spread out the cream cheese after mixing it with some milk - I think I'll add powdered sugar to the cream cheese next time. I also used 1 1/2 cups of blueberries for the sauce, and 10 eggs instead of 12 (which I think would have been a bit much). Thanks!

Baked Omelet Squares

Delicious, thanks! I omitted the olives, ham, and jalapenos, and scaled the recipe down to 8 eggs. Sauteed green onions and fresh mushrooms with the onion ahead of time. Had to use Mexican cheese blend since I didn't have Cheddar. It was a huge hit with my family - I'll be making the full recipe size next time! Will also add in diced tomatoes, which I think would be a great addition.

Chicken Breasts with Lime Sauce

I love the lime sauce in this dish - i followed other suggestions and just used chicken tenderloins instead of pounding the breast, and used Italian bread crumbs. Also substituted 2 green onion stalks for the chives. I had the same issue of the lime juice almost evaporating immediately, so I added chicken broth until it cooled down a bit, then the lime juice (substituted most of the butter with just broth.) I made this with a mushroom risotto. Thanks!

Szechwan Shrimp

So easy to make, and my husband and I loved it! I doubled the sauce recipe (but left ginger amount the same) which is a must, and also added about 1/8 cup of chili garlic sauce to the sauce. It had a great kick. Used uncooked shrimp, and cooked it in the sauce. Delicious, thanks!
