Todd's Famous Blueberry Pancakes

Reviewed: Feb. 15, 2010
Very nice texture - we used fresh blueberries and they came out really good. May use vanilla extract next time to give it another layer of flavor.

Pizza Casserole

We found this incredibly bland - I'm confused by all the great reviews!

Oven Fresh Seasoned Potato Wedges

Reviewed: Jan. 8, 2010
We liked these - I doubled the recipe and used 7 potatoes (they were on the small side) and added red pepper flakes. They baked for almost an hour, and had a great consistency. Thanks!

Mexican Rice II

Reviewed: Jan. 5, 2010
We've made this recipe several times, and love the Taco Seasoning suggestion - I add about 2 tsp of that. I also reduce the oil, else the rice is a bit greasy. Thanks!

Zucchini and Potato Bake

Reviewed: Jan. 5, 2010
Good veggie dish, thanks! I halved the recipe for the two of us, and added 1/4 cup shredded Parmesan and crushed red pepper flakes per other reviewer suggestions. Also added 1/4 sliced red onion. Will probably add more zucchini next time, and maybe garlic powder. Thanks!

Citrus Garlic Shrimp

Reviewed: Oct. 25, 2009
We liked the tangy citrusy taste - it was different than other shrimp dishes we're used to - but felt as though the dish was missing something to make it complete. Next time, I may add in asparagus, as someone else recommended. I left out the zest, and it was a good acidity. Used about 12 oz. of linguine, and added in the cornstarch as recommended by the top reviewer. Will make again. Thanks!

Linnie's Spanish Rice

Reviewed: Oct. 25, 2009
I thought I used a good salsa, but the rice was terribly bland.

Nice basic rice recipe - I added a whole onion and used 2 cups of the broth. Thanks!

Crispy Onion Chicken

Reviewed: Oct. 12, 2009
Family loves this - served with Onion Rice Pilaf - can probably serve with a side of pico de gallo or a veggie like green beans.

Blackened Shrimp Stroganoff

Reviewed: Oct. 2, 2009
This was a hit with my family, including my picky 2-yr-old daughter. I used regular onions rather than shallots, and didn't have roasted red peppers. I also used Creole seasoning instead of cajun. I love that this is a lower-fat version of similar dishes - thanks!

Chocolate Chip Muffins

Reviewed: Sep. 22, 2009
Somewhat bland, even with 1 tsp of vanilla extract added in. The coating on top was a bit much, and I only used half of my sugar mixture! My kids won't even eat the muffin tops because they're so crunchy :(

Overnight Blueberry French Toast

Reviewed: Sep. 22, 2009
My family loved this, although I messed up the sequence and baked it uncovered first! Either way, I don't think the bread will get mushy in this. I used challah bread, 3/4 cup sugar instead of the whole cup, and 1 1/2 cups blueberries in the layering. I also spread out the cream cheese after mixing it with some milk - I think I'll add powdered sugar to the cream cheese next time. I also used 1 1/2 cups of blueberries for the sauce, and 10 eggs instead of 12 (which I think would have been a bit much). Thanks!

Baked Omelet Squares

Reviewed: Sep. 22, 2009
Delicious, thanks! I omitted the olives, ham, and jalapenos, and scaled the recipe down to 8 eggs. Sauteed green onions and fresh mushrooms with the onion ahead of time. Had to use Mexican cheese blend since I didn't have Cheddar. It was a huge hit with my family - I'll be making the full recipe size next time! Will also add in diced tomatoes, which I think would be a great addition.

Mexican Corn

Reviewed: Aug. 21, 2009
This is very good - I used 11 jalapenos, but will probably tone it down next time to about 7-8. I also forgot the garlic salt but it was still good. I might add Rotel tomatoes next time around. Thanks!

Jalapeno Popper Spread

Reviewed: Aug. 21, 2009
This was a good, easy dip - very similar to others I've had/made, but with a kick. I used a 4 oz. can, and the 1/2 c panko/1 c. mozzarella mixture. It was spicy but not too spicy. I did have quite a bit leftover though, and no one in the house wanted to finish it since it's so fattening!

Baked Ziti Casserole

Reviewed: Aug. 5, 2009
This was a good basic recipe - I needed a meatless main dish since we were having vegetarian guests, so I made this pretty much as is. The only difference was to use 2 jars of sauce instead of one, which is a must - it would have been way too dry otherwise. Thanks! ***UPDATE***I made this again the following week, and added a liberal amount of Italian seasoning and garlic powder to the ricotta mixture. It was much better! Otherwise, the ziti has a blandness problem.

Minnesota's Favorite Cookie

Reviewed: Jul. 31, 2009
This is definitely a delicious cookie - I made a batch for a bake sale, and used the 1/2 brown sugar, 1/2 white sugar suggestion. I would never make these for my own house due to the ridiculous amount of butter, though! I may try a modified version.

Chocolate Chip Cake Bars

Reviewed: Jul. 31, 2009
This really didn't do much for me. I made it for a bake sale, and followed the recipe exactly. I had one bar for myself, 1 for my husband - he liked his quite a bit, but I thought it was waaay too sweet. I won't be making these again.

Mango Lassi II

Reviewed: Jul. 8, 2009
I just used the recipe to get an idea of the ingredients - I added them into the blender and just tasted until it was right. I used frozen mango chunks, so omitted the ice.
