About this Cook
I love to cook and I love having people stay with us. Would love to do a Bed and Breakfast type work but want to limit how many and when. Need some down time. I also have some health issues that limits my being on my feet alot. I love being a pastors wife and International Worker, helping people, and encouraging people. I'm pretty friendly and love my friends. We have lived in Paris FRANCE for almost 7 years now. Before that, we lived in Guinea, West Africa for 12 and then 6 years in Minnesota, before coming to France. We are currently pastoring Trinity International Church of Paris and love it. We also work with training Lay Leaders in Churches here in France. I love my 3 children and 7 grandchildren enormously and I have been really blessed with incredible Daughter-in-laws. I have a wonderful husband, who is also my best friend. We've been married 37 years-got married when I was 4---just kidding!! We met in College and have been in love ever since. I love to laugh and joke around
My favorite things to cook
I love to bake and try new recipes. I'm trying to lose weight so I have to put some of that on the back burner for the time being. One of my Cheesecakes was auctioned off for $45.00 one time-it was for charity. Lately, I've gotten into Calzones, Stromboli, made up Desserts. I love creating a different desserts...adding different flavors together and USUALLY being happily surprised I also make good chicken Enchiladas and Shredded Beef Chimichangas.
My favorite family cooking traditions
Homemade Eggnog at Christmas. Cookouts for the 4th of July. My wonderful in-laws started a tradition of cheese, sausage and crackers on Sunday nights.II also make a cookie we call Aunt Marcia Cookies-chocolate chip shortbread. I also make Banana Custard for Christmas morning along with Norwegian Kringles that my kids want all the time(the Kringles). Their favorite regular Choc Chip recipe is from a lady named Linda so they're Lindas Choc. Chip Cookie. My husband loves my Pecan Pie recipe which I make for his birthday every year-he doesn't like cake-except wedding cake, and then it's really the frosting that he eats.
My cooking triumphs
Cheesecake Chicken Enchiladas Shredded Beef Chimichangas Kringles Aunt Marcia Cookies Stromboli Spinach Quiche Calzones Creme Brulee Chocolate Mousse Tiramisu
My cooking tragedies
All of the above, at one time or another was a tragedy...the last quiche I made, I put in cheese..actually 4 kinds of cheese. WAY too MUCH the middle, tho done was cheese soup. Our visitors were skeptical so my husband and I ate the middle. It done--just toooooo much cheese!

Cinnamon Sweet Potato Slices
Yummy! I sliced the sweet potatoes thin, buttered them, sprinkled with cinn/sugar and topped with alittle brown sugar. Baked for 20+ minutes. Wished that I'd made more. Will definitely make these again. My mouth's still watering!! Thank you for this recipe!

Ham and Cheese Crescent Roll-Ups
I liked these but I DID tweak them. I rolled the dough just enough to make it into 1 larger Roll-Up. I then spread a layer of Pizza sauce, topped with ham, pepperoni, cheese, slivered green peppers and sliced black olives. Followed rest of recipe-just had 1 longer loaf. Oh, I also topped it with Herbs de Provence and Garlic Powder. Everyone loved it. So, I DID change it but it would have been yummy without all of the added stuff, too. I just got carried away!LOL

Pear and Almond French Toast Casserole
I made something extremely close to this (without the pears). It was incredible!! Everyone loved it. 2 1/2 cups of eggs is (according to my own recipe) about 8-12-depending on if you're using medium or large eggs. You can use Egg Beaters as a sub-maybe the reason for the cup measurement. I'm trying it this next week so my comment will be relevant.
