Fantastic Black Bean Chili

Reviewed: Jan. 10, 2009
Everyone liked it, even the kids. I used the larger can of crushed tomatoes and only 2 cans of beans, plus ground beef instead of turkey. We may make it the next time our vegan brother and sister-in-law come over (w/o the meat). I think my husband would have liked with a little spice, but my 5 year old like it as it was.

Ham 'N' Cheese Stromboli

Reviewed: Jun. 24, 2009
We skipped the brocoli and though we had a hard time getting the dough as thin as it should have been, the finished product looked like a long baquette and was tasty. We used Tastefully Simple Garlic Garlic instead of garlic powder. I also sprayed the outside with Pam and salted it a bit.

My daughter who is allergic to dairy can eat these - and she loves them. I love how they contain so much oatmeal!

Killer Pumpkin Pie

Adrienne can eat it with her current list of food intolerances and everyone said it was pretty good. It took longer to cook than it said, though.

Fluffy Pancakes

Worked well with rice milk. Also worked well halving the shortening to 1/4 c and adding 1/4 c rice milk instead as indicated by another reviewer.

Slow Cooker Spicy Black-Eyed Peas

Reviewed: Apr. 19, 2012
3 stars because the kids and DH didn't seem to thrilled. I made it w/o the cheese though. Also cut spices down a little and was still had a nice bite. I froze the second half - we'll see if I can make it more appetizing next time.

Slow Cooker Beef Stew I

Reviewed: Jul. 11, 2012
Family really liked it, but requested less pepper next time. I made it with 2 c. broth (to use up the can), no worchestire sauce (had none), frozen onions and celery, and added a can of carrots and green beans near the end (no time to cut them up in the morning). About 8 hours into it I increased the heat to high for an hour and a half because it looked like the meat wasn't going to finish. It's a keeper!

Flourless Oatmeal Blueberry Pancakes

Reviewed: Aug. 4, 2013
The kids like it and we will try them cold on a future day. (Also made some with banana). I used 1 whole egg and 2 egg whites, canola oil instead of coconut oil and rice milk instead of milk. Also, used raw honey because that's what I have. It seems very sweet, so perhaps less will be needed next time. Great option for a health(ier) breakfast!

Navy Bean Soup I

Reviewed: Oct. 25, 2013
Presoaked beans to reduce cooking time, sauted carrots, celery and onion with oil before added other ingredients. Also added barley (2 c.). Since we had precooked beans, the amount of water called for still worked well (maybe could have used more). The barley cooks during the last 20-30 minutes or so. My husband said there were too many beans (I think we could have used some more liquids, but since I didn't have a can of tomatoes, that played into it some, too.) We are freezing the second half. Lastly, we made it vegetarian and had some ham on the side for meat eaters to stir in. I will make it again.

Great recipe. It works great if you follow it exactly or even if you're a little short on tahini. I use powdered garlic 1/4 t instead of a clove of garlic. packs better in my daughters' lunches.

Black Bean Vegetable Soup

Reviewed: Mar. 29, 2014
Family liked it. I did the 2 c. of vege broth but also used the liquid from two of the cans of black beans. (I blended a 3rd can with a can of diced tomatoes). I doubled the cumin, also. Very good over rice!
