Sour Cream Coffee Cake III

Excellent! Exactly what I was hoping for. Tried as muffins (for ease of co-workers to eat)...stick with the cake pan. Tastes even better the next day. Super moist.

Gooey Butter Cookies

Wow. I'm in love. Used chocolate fudge cake mix, added 1 tea vanilla, didn't roll in powdered sugar, just dropped the dough by teaspoon and baked. Definately must put them in the fridge when the cool and enjoy them after they've sat for a bit. Just like Gooey Butter Cake here in the 'Lou!! Gooey and cake like...that's how's it's supposed to be. YUM!

Outrageous Chocolate Chip Cookies

YUM! It's like 3 cookies in one. I've made these twice now. First time as written, since that's what I'm rating on, very good. Next batch made the following changed to make them GREAT: 1 full tea vanilla, a pinch of salt (it's needed b/c of oatmeal and pb combo) and swapped the amts of brown sugar and white sugar. More brown sugar than white make it more homey to me. Regardless, both batches were gone quickly.

Curried Honey Mustard Chicken

Love the taste, but feel that the butter needs to be reduced. I prefer this dish with boneless/skinless chicken thighs, baked longer, and then no butter is needed. My boyfriend "doesn't like curry" but loves this dish.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Good recipe, only change I did and would suggest is to skip fying the zucchini in oil first. I found it to be too greasy. So while the first batch was just about done in the oil, and to salvage this, I put the rest of the sliced zucchini in bowl and microwaved for 2 minutes to slightly soften. THEN followed directions about layering and baking. VERY TASTY!!

Biscotti

For years I've always made a different biscotti recipe on this site that used butter instead of oil. Well, time for change. THIS is now my favorite. Yes, the dough is sticky when trying to form, but wet your hands and it will work like a charm. Easy to change up the additions - cranberry walnut one batch, almond chocolate chip the second batch today. And of course, drizzled with melted chocolate. Used grapeseed oil instead of veg oil, but none the wiser.

Granola Energy Bars

Great base to add your favorites! I included dried blueberries, craisins, almonds, upped the flax, used part steel cut oat for more texture, vanilla, wheat bran, chai seeds and some coconut. LOVE these! Made a batch of a different recipe on here...not as good as these! Thank you!

Donut Muffins

The second batch is in the oven...that should tell you how yummy these are! I agree with everyone else, cut the nutmeg to 1/2 tea and add cinnamon and vanilla. Making them into mini muffins is part of the charm of these! When out of the oven I tossed in big ziplock with spiced sugar (cinnamon, vanilla, nutmeg, ect (from The Spice House)), shook them a bit and put them on a rack to cool. Also topped some with glaze of powdered sugar, cinnamon and a few drops of milk. Both are yummy, thus the reason for the 2nd batch!

Thai Red Chicken Curry

Good base to start with, but definately needs more of everything. Used 3 Tbls. red curry paste, added garlc, ginger, curry powerder, lime juice and a TBLS of peanut better (all this based on other reviews). I will omit carrots next time and add snow peas I think. Otherwise it helped me get started on a GREAT dish!

Slow Cooker Italian Beef for Sandwiches

This is amazing! Used 2 pkgs italian season mix and a 2.5 lb chuck roast. After 8 hrs on high, removed meat, shredded (did that by itself pretty much) and returned meat to juice in crock pot for another hour. Simply amazing!

Potato Chip Cookies II

I grew up on these cookies. Pretty much the same except use powdered sugar in dough instead of granulated. Makes the much lighter and will melt in your mouth. It really makes a difference with this cookie. Dust with powdered sugar when almost cool.

Easiest Eggplant

I didn't want to fry my eggplant and this recipe, with a little help, was great! Added Parm and italian seasoning to the breadcrumbs. Baked and topped with mozz and a spoonful of diced tomatoes. Excellent alternative to fried!

Sauteed Portobellos and Spinach

Only thing I changed was used a bag of fresh spinach, not frozen. It cooks down quickly and the texture is better. This is very tasty and goes with everything. We have this once a week!

Eggplant Parmesan II

Good, but not great. Maybe I didn't cut the eggplant thin enough. Seemed that it needed to cook longer to get the eggplant a little softer. I'll try again. Easy enough though.

Spinach Brownies

Wonderful! Used 1/4 c butter instead of 1/2 c, threw in a little feta that I had, some garlic, and maybe 1/4 cup parm too. This was really good. Froze individually wrapped servings. Great low carb breakfast!!

Andrea's Pasta Fagioli

Great base to build on, made the following changes/additions: 1 diced zuchini, 2 cans diced tomatoes, used tomato paste instead of sauce and chicken broth instead of water. After simmering for 3 hrs, added 2 diced baked chicken breast. Served over pasta (didn't pre-mix it) and then put the parm on top. Wonderful "homey" meal. Made a large amount...great to put in freezer (w/o the pasta or chicken).
