Mom of 4 + 1, ex special events planner, current unemployed writer. I used to love to cook, but after so many years of cooking and cleaning up, I no longer love it. Because I have been cooking for so long, I have started to give myself rules for cooking... like, no stove when it's over 85 degrees out, T for Tuesday (have to cook something with a T on Tuesday), leftover brunch, etc. It makes my chore a little more fun.
My favorite things to cook
I love to invent soups and sandwiches. I also love to use my crock pot/slow cooker. My favorite thing to cook is breakfast for dinner but my kids don't love it so I do not do it very often.
My cooking triumphs
If you ask my husband why he married me, he will tell you it is because of my Sweet Potato Casserole. I think that is a triumph! :)
My cooking tragedies
Oy... Many years ago, when I was a single mom, we had breakfast for dinner every Monday night. One Monday morning, I made an egg casserole in my slow cooker. All day long I thought about dinner. That evening, the kids and I walked into the house to the wonderful smell of breakfast. The kids and I excitedly took our first bite then spit it out. It was the most vile thing I have ever eaten. I took the kids' plates, tossed the egg casserole in the garbage and took them to McDonalds. Worst. Meal. Ever.

Curried Coconut Chicken
This was amazing! My hubby loved it, my kids (ages 5 and 8) loved it and I loved it. I made three changes: 1). I used hot curry powder. 2). I only used half a can of stewed tomatoes and 3). I used brown sugar instead of white sugar. Amazing.

Sesame Lime Steak Wraps
This is one of my hubby's favorite meals. I use sirloin tip and let it marinate for HOURS.. usually between 6-8. I also add extra sesame oil because that is a flavor my family enjoys. I make a mayo/sriracha sauce that I spread on the tortilla before adding the lettuce and the meat. The coolness of the lettuce is a wonderful marriage with the heat of the sriracha/mayo.

Yummy Honey Mustard Dipping Sauce
My 16 year old daughter is a honey mustard freak. She dips everything into honey mustard... even pizza. This is her favorite. It's so good, she told a local restaurant owner about it and now he wants me to bring some in so he can add it to a couple of his sandwiches.
