To Die For Blueberry Muffins
I make giant muffins nearly every week for my husband. He likes to have it for his mid-morning break and since he works outdoors in all kinds of weather conditions, having this comfort snack is a real boost. After trying a few different recipes over the last couple of years I have to say that this is, by far, the best one. Very much like the muffins you might get at the bakery. Except I know exactly what's in them!!! Made this recipe last week for the first time and he begged me to keep this one. I did make one variation though. I use plain non-fat yogurt instead of milk. He has no idea it's in there and it tends to make the muffins a little firmer. I also agree with many others who have commented about the crumb topping. The recipe makes way too much but I put the leftover in a sealed container in the fridge to sprinkle on toast. Today I made cranberry, walnut muffins using the basic recipe and changing out the fruit. My tip would be this: be sure to leave the batter sit after filling the tins while making the topping or for at least 5 minutes before baking. This allows time for the baking powder to activate which will give a nice round rise to the finished muffin.
