Favorite Mexican Salad

I found myself in a pinch for a side dish to go with a Mexican casserole, and I had almost all these ingredients on hand (was missing the avocado). My son and his wife LOVED it! I did, too! I have made it twice since and will serve it again tomorrow--I'm hosting a work party with 20+ guests and it will be the main side to go alongside the entree! YUMMO!

The Best Rolled Sugar Cookies

Wow. I hate to give a bad rating, but these were awful. I followed the recipe exactly and I will never make them again. They were crumbly and tasted like egg! I have been making sugar cookies for decades and decided to try a new recipe for fun. The best sugar cookies are made from the Better Homes and Garden Cookbook (another reader said the same).

Day Before Mashed Potatoes

I've been making my mashed potatoes this way for years! They are divine! The only difference is that I do add some milk (to get to the preferred consistency), and instead of the onion powder, I add 1-2 teaspoons of Lawry's seasoning salt. I get rave reviews each time!

Balsamic Roasted Pork Loin

I followed the instructions exactly. I have a meat thermometer that is built in to my oven and removed the roast at exactly 145....it was still a bit bloody in the center however. I didn't enjoy the flavor, so something was not right. My son LOVES pork and commented that it tasted metallic. (?) I think something must have gone wrong as this is SO highly rated! I will try again sometime: maybe with a different brand balsamic vinegar! (I will not give this a bad rating as I don't want to blame the recipe...I'll blame myself!)

Cheesy Garlic Bread

My son thought this was the best bread he'd ever eaten!!! It was a change from the version I usually made, and I was ready for something new. This was very good and simple. Careful with the oregano...it is strong and will be the dominating flavor if you use too much.

Asian-Glazed 'Melt-in-Your-Mouth' Pork Tenderloin

This was a real hit with my brood! I simpified the directions by only adding the brown sugar and salt to the brine. I honestly think that adding all those ingredients twice is overkill and too time comsuming. The meat was moist and the flavors were great. I recommend this one with two thumbs up!

Chocolate Cavity Maker Cake

Great cake! I poured a can of cherry pie filling into the center of my bundt cake (once I turned it out onto the cake plate) and it was so beautiful! I served it for my sister's December birthday celebration and it was a hit!

I liked the flavor of this recipe, and followed it exactly, but would recommend adding more potato. I would also save the bacon to sprinkle on top just before serving to keep it from getting soggy.

Flavorful Flounder

Good,but I think it needed some tweeking. I felt like there was too much butter. I will make sure to use unsalted next time as the topping was too salty for me. I think the addition of panko crumbs, as one reviewer suggested, would probably be an improvement. I will make this again, however, with some alterations.

Slow Cooker Northern White Bean Bacon Chowder

I grew up eating lots of northern white bean on cornbread...so this is old-school comfort food for me. I didn't make cornbread to go with it, however, but did as another reviewer suggested and made garlic cheese toast to eat with it....yum. I do believe that it needs more flavor than what the bacon can give, so I stirred in 2 tablespoons of the bacon grease and I added abut 1/2 a cup of diced up leftover Christmas ham. I also followed the advice of others and didn't bother with any pureeing. Will make again!

Frosted Cake Brownies

Good recipe. I made chocolate frosting from scratch (used the dark Hershey's cocoa powder, butter, milk, vanilla and confectioner's sugar). Makes for a very moist, dense cake. Thanks for sharing.
