Rhubarb Jam

Really tasty, but it didn't "jam" up. More of a fruit sauce. I suspect it's due to the long cooking time and will try it with a shorter cook time and a bit of pectin. But the taste is really great!

Almond Rhubarb Coffee Cake

A++. Fabulous. Made it exactly as written. Might add some cinnamon next time, but even without it's delicious. My husband who doesn't even like sweets thought it was fantastic.

Lemon Fluff Cake

Absolutely delicious! I've been looking for a good white cake recipe, and this is the one I'll stick with. I used almond flavouring instead of lemon and made cupcakes with the batter, topping each cupcake with some almond slices before baking and topped them off with a sprinkle of icing sugar afterwards. Seems like a very flavour-versatile recipe - I'm going to try lemon, orange, banana and plain vanilla in the future as well. And the cake was SO fluffy and moist - just like a Duncan Hines mix but better-tasting and not full of chemical garbage. Wonderful.

Creamy Rice Pudding

Yummy! My rice, milk and sugar mixture thickened up in about 12 minutes, not the 15-20 prescribed. I also added a generous dash of cinnamon and used craisins instead of raisins (I didn't have any raisins) and Splenda instead of sugar. Absolutely superb. Will make this over and over.

I can't make this recipe too often because I'll eat the whole pan and blow up like Violet in Charlie and the Chocolate Factory. Incredibly delicious and also easy to put together. Great way to impress dinner guests.

Chocolate Zucchini Bread I

I found this bread to be a little bit too dense and heavy, but the flavour was nice. As another reviewer mentioned, the chocolate squares can be replaced by 6 Tbsp of cocoa and 2 Tbsp of butter - if you do this, however, I recommend mixing them into the batter separately or you may end up with chunks of unsweetened chocolate in the cake.

Banana Coffee Cake

Wow! This was incredibly delicious and I got rave reviews from my coworkers. Note for anyone looking for "banana cake" - this isn't it. It has a subtle banana flavour but it's not banana cake, it's coffee cake. Like some other reviewers, I used pecans, butter, brown sugar and cinnamon for the topping, but the cake would have been just as good with the original topping, I'm sure. Light, fluffy and moist. This one's a keeper.

Pumpkin Gingerbread

Easy and delicious. My boyfriend's exact words were "THIS is what I'm talkin' 'bout!" Stayed moist for days (well, until we managed to finish it off). Will definitely make this again.

Beth's Spicy Oatmeal Raisin Cookies

Wow! These were great. I didn't have any shortening, so I just used 1 cup of butter, and I didn't have ground cloves so I substituted nutmeg, but they still came out wonderfully. For the recipe to yield 3 dozen cookies, you'd have to make pretty big cookies - I got 3 dozen "mini" cookies (3/4 inch ball of dough) and 2 1/2 dozen regular sized cookies. Soft, subtly spicy, beautiful. Thanks for the recipe!

The Best Rolled Sugar Cookies

Very easy recipe. I followed others' suggestions and froze the dough for 3 hours, then let it sit out to thaw to malleability before I rolled it out. My cookies didn't spread at all, which was perfect. Also cookies aren't very strongly flavoured but are quite pleasing. I used mine to sandwich homemade strawberry ice cream for a valentine's day treat.

Herb Baking Powder Biscuits

Fairly tasty. I substituted butter (cut in) for the canola oil for taste and health purposes, and the biscuits came out nice and flaky. They smelled heavenly when baking. A little bit dry, but not too bad. I'll try these again.

Cinnamon Belgian Waffles

These waffles were fantastic and very easy to throw together. I would recommend, as some other reviewers have, of increasing the cinnamon to up to 1 teaspoon. I didn't have buttermilk, so I just used regular skim milk and they still turned out just fine. Delicious with cinnamon-flavoured syrup.

Simple Whole Wheat Bread

This was so easy to make and turned out beautifully. I made it into dinner rolls by scaling the recipe down to 2/3 and breaking the dough into 20 balls, distributed between 2 round cake pans. I brushed the tops with an egg wash before baking, and out of the oven came delicious, fluffy whole wheat rolls. Thanks for sharing the recipe!

Irish Lamb Stew

I made this with beef instead of lamb because lamb was too expensive. The beef turned out so tender that no knives were required. I made it the night before, refrigerated it and then skimmed the congealed fat off the top before reheating. Added a generous amount of salt and pepper and some extra thyme, and got rave reviews!

Basic Quiche by Shelly

I followed some other reviewers' suggestions and, after tripling the recipe, added a couple extra eggs and kept the half-and-half to 4 cups. By tripling the recipe, I had enough royale to make 4 quiches, and though it seemed very heavy on the cream, it set very nicely and tasted delicious. I used various toppings, including steamed spinach, onions, mushrooms, ham, green onions, and tomatoes. Everyone enjoyed it.

Amish White Bread

This bread was fantastic. I made it on a Sunday afternoon, and kept it in a ziploc bag during the week while I slowly ate it up. It was still good on Friday night. I gave one of the loaves to a friend who has demanded that I make him some more. I think this will become my regular white bread recipe.

Challah I

This bread was fairly hassle-free to make, and it tasted delicious. I followed other reviewers' suggestions and added a couple of extra egg yolks and an extra 1/4 cup honey. My only complaints would be that the colour was not that of challah - still very white even though there were the extra egg yolks, and it wasn't as fluffy as I would have liked. Next time, I'll add more yeast. I'll definitely be trying this recipe again, though!

Blueberry Cream Muffins

These are delicious muffins and I get rave reviews for them, however, the recipe as listed is a bit lacking in punch - I add some cinnamon and nutmeg, and sprinkle brown sugar on the tops of the muffins. Thanks for the recipe, Kim!
