Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

Excellent! Made for a champagne brunch today and everyone loved it. I found an organic dressing (Bragg Healthy Vinaigrette) made from apple cider vinegar and honey that I used to save time. I also substituted honey roasted cashews instead of pecans and added some blueberry infused dried cranberries as suggested by another reviewer. Thanks for this recipe!

Easy Garlic Broiled Chicken

I was so disappointed with this recipe. I won't be making this again. It smelled wonderful, but tasted very bland and only flavorful if you get a bite with the crusted topping loaded with garlic. I did not completely double the garlic because it seemed like so much, but maybe I probably should have... Each member of our family was trying to figure out what they could dip it in to make it taste better.

Sensational Sirloin Kabobs

We used a T-bone, cutting it off the bone to marinate for kabobs. Cooked to medium, enjoyed immediately off the grill - amazing taste! We made this for company, and it was a hit with the steak-lovers! I even liked it though, (not being a steak fanatic myself)... says a lot. Great marinade!

Orzo with Parmesan and Basil

Goat Cheese and Arugula over Penne

This was wonderful! I brought it to a wine party matching this dish with a Pinot Grigio. It was a hit! Everyone loved it. I added some sauteed mushrooms and a little more garlic. I can't wait to make this again for another occasion.

Chicken Milano

This was excellent! I made it for company with all rave reviews. It seemed to take a bit of work, but it was well worth it. I did cut the chicken up and cook it with oil and garlic before adding it to the sauce, to which I added portabellas and white wine (in place of some of the chicken broth), as some reviews wisely suggested! I also used penne pasta, tossed it all together and topped it with parmesan just before serving. Wonderful!

Sausage Stuffed Mushrooms II

I don't know about these. They were flavorful, but after tasting one or two, it was enough. The sausage/cream cheese texture was not to my liking. My husband didn't like them either. I did dip the tops in bread crumbs, and drizzle them w/ olive oil which helped, but I won't be making these again. Not that they are bad (one star), I just personally don't care for this kind of stuffing for mushrooms.

Cocktail Meatballs I

These were great! I am really just reviewing the sauce though, because I used frozen meatballs since time was short. My husband and 2 year old also loved them. These were so easy and delicious. They were even better than a from-scratch gourmet magazine recipe that I've tried. Amazing. A must try! Thanks for this recipe.

Hot Artichoke and Spinach Dip II

I thought this was good. Took the advice of some reviews: added more garlic (about 3 cloves), a little milk to make it less dry, and put some of the mozzarella into the dip. Still think it is missing a little something. Next time I will try less garlic (maybe it overpowered other flavors?), and maybe some sour cream as suggested by others.

Green Beans with Cherry Tomatoes

These are great! I usually make with canned grean beans to save time. Just cook the beans in a pan with everything but the tomatoes. Add the tomatoes during the last minute or so of cooking time. Drain the juice and serve.

Baked Dijon Salmon

This recipe is wonderful. I've made it many times. My husband (who before this recipe never even liked salmon) requests it often. I've made it for company too, with rave reviews. Everything in this recipe combines perfectly. Every bite just seems to melt in your mouth, but yet there is that slightly sweet crunch of the pecan topping. One thing I add is some fresh lemon juice drizzled generously right over the top of the fish just before serving. It brings out the flavors even more.

Garlic Chicken

I think this is a good, quick and easy chicken to make for dinner. Sometimes I pound the chicken to make it a little thinner and more tender before dipping it in the oil. I only gave this recipe 4 stars because several times the chicken has come out a little dry, and I think it needs some kind of sauce with it. My husband and 2 year old seem to like it quite well, especially dipped in a homemade ranch dressing. I think I will try it next with a marinara sauce, or maybe on a salad. It is good on its own - don't get me wrong - I just think it could somehow be better. It's still a keeper in my recipe collection!

Jamie's Minestrone

This soup was incredible. I was looking for a soup to make on Halloween after trick-or-treating. I have never been too crazy about minestrone, but I had to try this one after seeing the ratings and reviews. I am so glad that I did! My husband, in-laws and even my 2 year old absolutely loved this minestrone soup! I took some of the advice from other reviews - added a little more red wine, used a can of diced tomatoes, put the beans in later in the cooking time, and served sweet italian sausage on the side (I cooked it separately, sliced it, put it on the soup after ladling it into the bowls, and then topped it with parmesan cheese). It does make a lot, but the leftovers are just as wonderful if not better the next day!
