Salmon Cakes II

Nice easy recipe with ingredients always on hand so a no brainer for a nice meal when you forget to take meat out of the freezer before you go to work -maybe that's just me. A dolop of light mayo and dijon mustard added flavor and creaminess. Dipped in panko and brushed with butter to save frying. Baked 420 for 20 mins - last minute broil for extra color and crisp top. Lovely! Give em' a try.

Orange-Ginger Chicken and Veggies

A wonderful quick and tasty meal. Sometimes my Asian cooking doesn't come out as exptected but this was a pleasant surprize. I was out of hot sauce so I used red pepper flakes instead... and I think I actually prefered it. Kids liked it too so that means I get to make it again. Yes! Oh, and I added sliced baby corn for the kiddos. Definitely a must try for easy of cooking paired with taste.

Chocolate Chip Shortbread Cookie Logs

It's true! I made this for a holiday cookie exhange and won both "best use of chocolate" and the grand daddy award for "best over all cookie". It pleased both the adult and children judges. I dipped the ends 3 different ways...assuring to garner the votes of the various judges. Ha! I dipped some in just plain chocolate on both ends, some in chocolate with nuts and the remainder in chocolate then in red and white non pareil balls which made for a festive, eye catching cookie. The recipe is good the way it is but it is a fairly soft dough because of the shortbread texture so be cautious. The chocolate dip using shortening was perfect and melted nicely in the microwave. Be sure to try this recipe and make sure you have the red and white non pareils to top it off. It's a winner!

Raspberry Cream Cheese Coffee Cake

This coffe cake has been a signature recipe for me for many years, even before it was featured on All Recipies. If you follow directions properly and do not substitute, it will turn out perfectly. I have a problem with so called "expert" level cooks who change recipies or don't have the proper ingredients and then rate the recipe lower than necessary through no fault of their own. Please use the proper pan, use almond extract, not vanilla and please DO NOT add lemon. Also, do not take out more of the dry batter than called for at the beginning because the ratio will not coincide with the liquid added to make the batter for the crust. This is truly one of the best deserts ever. Try it!

Plain Cake Doughnuts

While I can see how this would be a good/tasty recipe, I can not rate it the best because the dough was very sticky and hard to work with. Perhaps I should knead with more flour before adding more to the surface for flattening and cutting. The directions/ingredients should coincide better with regard to adding more flour. Perhaps I will try again.
