Baked Kale Chips

Very yummy! Couple things though, dont use cooking spray, it takes some of the flavor away, instead I tossed the peices in a little bit of olive oil and used sea salt. I also cooked it on a pice of foil and turned the heat down to 325, this helped keep them from burning alothough I kind of liked the slightly overcooked flavor. I will definately use this recipe often!

Elegant Fig Appetizers with Goat Cheese and Almonds

OMG! these are amazing, must try. Found this a couple months ago for some left over goat cheese I had in the fridge, I have made them several times since then and I crave them often.

Coconut Rice

This is a yummy variation for rice, we love rice in my house and this was a great change. I did use fresh coconut milk and added the coconut fleash after cooking. It came out wonderful.

Artichoke Chicken

This was a wonderful recipe. A great change from ordinary baked chicken. I used the marinated artachoke as someone suggested, it was just the right seasoning. Will be making this again.

Halloween Bloody Baked Rats

This was great! I did not put faces or tails on the rats, but still got the idea, my kids loved it. I dont normally like meatloaf, but the sauce made this super yummy!

Not that great, definately shouldn't have used so much sugar, I like less than a full cup in koolaid anyway. Didn't get quite black either, more brown.

Halloween Brain Dip

Loved this, I made it for halloween this year and it was a huge hit. I could not get the fruit to stick, so I just draped it over the sides, worked fine and looked good. If you look at the inside of the cauliflower before cutting, you can make sure you dont cut any of the conections. I fit 5 avocados worth of guacamole onto the a mid size cauliflower, had to pile it, but totally worked great. Definately will use this again!

Roasted Beets and Sauteed Beet Greens

Good, not a huge fan of beets, but I really enjoyed this. I dont think i cooked the greens long enough, because they were still quite bitter, but will try again later. The beets themselves were awsome.

Baked Whole Cauliflower

Delish, cauliflower is the only vegetable my 3yr old ever wants, (thanks Doodlebops!) i used the chicken broth to boil it and it was wonderful!

Bacon Wrapped Water Chestnuts II

This was an amazing idea, i realized too late that i didnt have chili sauce so i used some cheyanne pepper and katsup instead. probably would have been better with chili sauce, but we will definately make this again!! even the people who said they HATED water chestnuts really enjoyed these.
