Fluffy Pancakes

These turned out incredible!! I used whole wheat flour as that's all I had and they were still fluffy and light as air. I'll never use another recipe!

Chickpea Falafel Burgers

These were delicious and very satisfying! Our blended beans had a bit more liquid so we added more bread crumbs to help dry up the mix. Used Garam Masala instead of straight up curry powder which was fantastic. Next time I'd add even more bread crumbs as they stayed quite soft in the middle. We doubled the recipe to get 8 patties and wound up with around 14 'burger' sized patties - but we're happy for the leftovers!

Beer Butt Chicken

Delicious, moist and tender, and so so easy! Tasted like a rotisserie chicken from the deli counter but fresh and using only the ingredients we wanted! We rubbed the chicken down with a blend of: smoked hickory himalayan sea salt, chipotle tobasco, grapeseed oil, white truffle oil, paprika, pepper, rosemary and garlic. Delicious!! We served this with the Quinoa Spinach pilaf recipe found on this site (but subbed out Kale for the spinach). Highly recommend this well-rounded meal!

Cheesy Quinoa Pilaf with Spinach

This was absolutely delicious!! The nuttiness of the seeds, the tangy lemon juice... we used kale instead of spinach because we like it better and used grapeseed oil instead of olive oil. Used sunflower seeds as recommended, but cheaped out on the gouda as goat's gouda was quite a bit more expensive than plain gouda - it was still terrific! We've definitely added this to our regular rotation.

Mom's Zucchini Bread

I used pecans instead of walnuts and took another reviewers suggestion of 'sugaring' the pans instead of flouring them... I brought a loaf into my office and had 2 people ask me if they could BUY two loaves each! SO GOOD!

Cherry Crunch

Really dry, not very sweet... I used some canned peaches in addition to the cherries. Certainly not a bad recipe, but not was I was looking for.

Slow Cooker Beef Stroganoff I

I used Mushroom Onion soup instead of bothering to chop fresh onion, and replaced half the water with red wine - it turned out great! I'll definately be making this again. It made four portions for me topping 'no-yolk' egg noodles and I thought the consistancy was great as well. Definately a keeper!
