Downeast Maine Pumpkin Bread

This is a fantastic recipe! I followed Lovemyfamily09's suggestions, with the exception of modifications to the spices. We also added a bag of mini chocolate chips. We made muffins, baked at 350 degrees for 25 minutes and they turned out great! I would probably only use half a bag of chocolate chips next time because they were a little too sweet, IMO. But otherwise perfect! The spices were spot on as written in the original recipe. This one is going in my recipe book!

Creamy Hot Cocoa

This recipe is spectacular! I read the other reviewers suggestions and reduced the sugar to a 1/2 cup and increased the vanilla to 1 tsp. I used my good vanilla and boy was it delicious! Made a pot of this one morning for the kiddos and I, and we all loved it! This is a keeper for sure! A MILLION times better than Swiss Miss.

Annie's Fruit Salsa and Cinnamon Chips

This is a phenomenal recipe! So simple and so tasty! I'm always looking for simple throw-together appetizers to serve at home party get togethers (like 31 Bag parties or Partylite parties). This fits the bill! At first I cut the tortillas in wedges before spraying, but then I got wise and followed the other reviewers suggestions and sprayed both sides of the whole tortilla with cooking spray, then dredged both sides in cinnamon-sugar. I put my cinnamon sugar in a pie pan and that worked really well for dredging the tortillas. I found that 8-9 minutes was the perfect timing for the chips. The salsa was delish too! I didn't add any sugar and used my homemade strawberry jam as the preserves. My kids especially loved this dish! It's definitely a keeper!

Oatmeal Peanut Butter Cookies

This is the PERFECT peanut butter cookie recipe! I used unsalted butter instead of margarine and shortening. And I used crunchy peanut butter, added 1 tsp. of vanilla extract, and increased the amount of oats by a 1/2 cup. I also added a 10 oz. bag of Reece's peanut butter chips. YUM! Total peanut butter flavor in every bite! I baked these for 12 minutes and they came out just browned on the bottom and soft through the middle. This will be my go-to peanut butter cookie recipe from now on!

Black Bean and Corn Quesadillas

Excellent! The entire family enjoyed this dish. Left out the brown sugar and assembled/cooked them on a comal. Served with roasted cubed sweet potatoes and a side salad.

Quinoa and Black Beans

This dish was just okay. Nothing spectacular about it and it was kind of bland. My family ate this as a main dish with roasted cubed sweet potatoes and a side salad. I ended up mixing the sweet potatoes in to the quinoa, which helped a bit. Overall, I may consider this as a side dish but definitely not a main dish that I would repeat again.

The Best Rolled Sugar Cookies

Perfection! I added 2 tsp of vanilla, per the other reviewers suggestions. These dough was the perfect consistency for rolling and cutting. I let the dough chill in the fridge for 2 hours and then took it out of the fridge about 5 minutes before I was ready to roll. I also put the pan of cutouts in the freezer to chill for about 3-5 minutes to help them retain their shape. Great flavor and perfect for decorating!

Best Chocolate Chip Cookies

This is by far the best chocolate chip cookie that I have made! I didn't have regular chocolate chips on hand so I substituted white chocolate chips, butterscotch chips, and mini chocolate chips and used pecans instead of walnuts. They were delicious!

Easy Sugar Cookies

Delicious sugar cookies! Read the other helpful reviews, and they were right - removing the cookies from the oven at precisely 8 minutes is the secret to soft sugar cookies. They're a little doughy in the middle, but buttery and delish for it!

German Chocolate Cake III

I followed the cake recipe to a T. Even after greasing the pans my cakes stuck horribly. One layer completely fell apart so I took another reviewers advice and froze the other two layers for about an hour. Then I dunked the bottoms of the pans in hot water for about 20 seconds and they released from the pans just fine. I accidentally lost my grip on one of the pans and my cake layer ended up with a water bath, but that was my fault. I'd still say this is probably my worst caking experience to date - the cakes were very crumbly, more so than your average chocolate cake. Very tasty and moist, but the moisture was almost to it's detriment. Also took the advice of other reviewers and toasted the coconut and pecans and doubled the recipe, which was a blessing because I had enough to cover the boo-boos. The frosting tasted amazing! All in all, I think the recipe is a keeper. Time consuming, but in the end worth it. I would suggest perhaps omitting the water when melting the chocolate. This cake is moist enough without the extra water.

Peach Pie

The is a nice base recipe. The first time I made it I followed it to the letter and the pie came out runny. Husband said that the best thing about it was my homemade crust. Second time around, I mixed 1/2 c. sugar, 1/2 c. brown sugar, 1/3 c. flour, 1 tsp. cinnamon, 1/4 tsp. nutmeg, and 1/8 tsp. cloves together then cut in the butter with a pastry blender. I added this to the sliced peaches and mixed it together, then I arranged the peaches in my pie plate. I did not add the remaining liquid because I felt the peaches would add their own juice and I just wanted to sweeten and spice them up a bit. I also applied an egg wash to the top as well as a sprinkling of cinnamon and sugar. The pie turned out fantastic and, bonus, my house smelled great! I baked at 350 for 55 minutes, then turned the oven off and allowed the pie to cool in the over for 2 hours before removing.
