I'm rating my own recipe!! Watch your salt intake. Sometimes the beans in a can are really salty so you may not need too much more. Start with 1 tsp. salt and work your way up to more IF you need it. We like a lot of garlic so 5 cloves may be too much for some. It definitely has a garlic taste to it, so figure out what goes well with your palate. The consistency is wonderfully smooth. Don't be afraid to really puree it.

Absolutely Fabulous Greek/House Dressing

Very good dressing but the vinegar/oil ratio needed a tweak. I used a 10 serving recipe and cut way back on the red wine vinegar. Instead of 2/3 c., I used 1/3 c. Dressing was quite thick because of this so I added a little water to thin out. I also added about 1/2 tsp. sugar to counteract all the tartness. Another reviewer used both red wine and balsamic vinegar which I will try next time. The balsamic won't be as tart. Definitely a repeat.

Grilled Salmon I

Very good --nothing phenomenal about it, but a repeat per my family! I marinated my piece for just about 10 minutes and stuck my fork into the flesh so the marinade could dribble into the flesh of the salmon. It was good!

Simple Garlic Shrimp

Simple recipe that catches the essence of garlic and shrimp. Just make sure to NOT overcook shrimp --then it's too rubbery.

Corned Beef and Cabbage I

Fast and Delicious Black Bean Soup

this is a 4-5 star recipe. I gave is a 4 just because I changed a few things: 1/2 tsp. cumin, and I pureed all but 1/4 c. so that there was a little texture to the soup. It's good!!

Roast Pork with Maple and Mustard Glaze

Really, really good! I cut the marinate in half for a 2 lb. roast and it's still enough. I baste once or twice while cooking. I also used a dijon mustard that had mustard seed in it. Next-day sandwiches are super!

Ciabatta Bread

Just a great, light, "holey" kind of bread. It was quite sticky and wet, and I did add about 1/8 cup more of flour, but as long as you don't handle it much, it will do what it is supposed to do. I spritzed too early and got a flat loaf. I put the dough in a Dutch oven to bake. It comes out looking like artisan bread. This recipe is great. Just make sure to handle dough as little as possible.

Potato, Broccoli and Cheese Soup

It's a very good recipe but only 4 stars since I tweaked it so much: 1 c. onion, not 2; 1 1/2 c. cheese, not 3; I added the broccoli the same time as the potatoes --didn't pre-cook it; 1 garlic chopped, sautéd with the onion; added a little milk and flour to thicken slightly.

French Bread

Can't give the recipe a 5 just for the fact that I had to tweak it a bit: I used only 5 c. of flour (thus, the bread is not so dense as some reviewers have said). I added a little sugar (2 tsp.) so the yeast will rise better and also for taste.

Golden Crescent Rolls

This is a good dinner roll -- light and fluffy, but NOT a croissant! I brushed egg on the rolls before putting them in the oven -- for a more golden color. I used canola oil for the shortening.

Baby Loin Back Ribs

This is a bit time consuming, but so worth the effort. -- probably THE best rib recipe. When you don't need to tweak the recipe at all, it's worth a 5 star rating. Just watch your ribs so they don't dry out.

Chipotle Crusted Pork Tenderloin

Delicious! I used a Pampered Chef Chipotle seasoning --only 1 1/2 tablespoons. Three would have been too much. I also rubbed the rub on instead of shaking it on in a bag. A quick, good meal!
