Wild Rice Casserole
I made this recipe and changed it a lot and it was okay. I made it for a large group (35 people) and the multiple to 30 servings was enough to feed at least fifty as a side dish. If you are multiplying it for more folks, keep that in mind. I left out the bell peppers, put in broccoli, used real onions (I should have used real garlic too) - and used large corningware casserole pans to make it in. It took about an hour and a half to cook, too, but I was making it the day before so that timing difference was okay for me but anyone making this dish should know that that part is a little off in the recipe. Everyone who ate it seemed to like it all right, but in spite of my efforts to follow the suggestions of the other reviewers, it was still kind of bland. If I made it again on a small level I might do it in the pressure cooker and add some zingy spices. I don't discourage people from trying this recipe because it is a very healthy one, but if you do try it you might want to practice with it first on a small level with some of your favorite spices before serving it to a group of guests. This recipe is a good effort at healthy food and I do like that.

Spinach Casserole
This recipe is easy and FABULOUS! I cook for groups, and tried this on a group of twenty eight folks. The recipe multiplied nicely, too. I multiplied it to show for feeding 32, and made two large casseroles in my corningware casserole cooking pans. It was all eaten except for two small pieces! The only thing I did different than the original recipe is that I exchanged the process cheese food for the real medium cheddar cheese, per a suggestion from another reader. The feta cheese amount is just right, and the whole thing got rave reviews from everyone who ate it. This is an attractive dish. Also, since I made it the night before our big luncheon, I just want to say it re-heats nicely without too much problem with the philo dough. So when I cooked it, I cooled it down, then covered it with foil then refridgerated it overnight. I took it out of the 'fridge in the morning about two hours before I had to reheat it so it would come to room temperature. I turned the oven onto the same as the cooking temp (425 degrees) though a lower temp could easily be used. I warmed it up for fifteen minutes or so. Advice on reheating: keep an eye on it as it is cooking - the philo dough got a little brown around the edges, but turned out just fine.

Broccoli Casserole
Thank you, Laura, for this easy and delicious recipe. I cook for groups, and I tested this on one of our groups, and it got an A-1 rating. The only thing I don't like about this recipe is the canned soup, so I went to the store, got the general ingredients for cream of mushroom soup and made it from scratch. It turned out beautifully. I followed some of the suggestions by others, one was to wait until the end to put on the cheese. I am glad I did this. May I recommend you create a vegan (no cheese) recipe for this one? Also, I added Gimme Lean pretend sausage meat, and that made it extra special. Yummm! One more thing: When I multiplied it for 28, I did have a little more than was needed, so this recipe is very generous, serving-wise, as our people have very hearty appetites.
