Basic Crepes

These are quick and easy to make. Do, however, mix the wet stuff first, before adding the salt and flour to the liquid. Otherwise, you end up with a lumpy (but tasty) mess. I use a cast-iron griddle, over med-low flame, and it is imperative that you roll the griddle around to distribute the batter. If you do that, you get nice thin, almost see-through, crepes. The edges curl up when it is time to flip them, and they stay in tact during the flip. Overall, a great recipe, but the mixing steps are a little off....

Great variation from regular raviolis! wasn't too crazy about the pumpkin seed cream sauce, but with another one, it'll be a bigger hit, I think!

Nice flavor, but I'm not real fond of pumpkin seeds. Next time I'l leave those out, ans the puree, while smooth, still has a grainy/chewy/gritty testure from the seeds...

Mongolian Beef I

Excellent for a pepper belly! I made mine with my own peppers that I had dried, and found it gave a nice "hello"; my wife thought it was a little too spicy, but, just cut back a bit on the peppers for the lightweights, and it's an excellent dish over rice or noodles.

Tasty! Fried mine in corn oil, and you definitely need to let it drain for a goodish while, or it is still pretty greasy.

Pepper, Onion & Feta Pizza

The feta in this is an awesome choice. Complements the peppers and onions beautifully. Added some diced tomatoes to it as well, which was a nice touch, too.
