Cranberry Pistachio Biscotti

Nice and easy. Omitted the pistachios, added almonds and orange zest. Will use again and again with all the different combos. Anise and poppyseed next batch and will freeze!

Pumpkin Cheesecake II

VERY VERY good! Really easy to make. If you like ginger snaps then definitely do a ginger snap and toasted pecan crust and double the recipe! Served with whipped cream and a caramel sauce (just 1/4 water, 1 cup sugar, bring a boil and let it reach a golden color, slowly add 2/3 of a cup of warm whipped cream, and whisk- let cool and store covered in fridge). Will make again and again and again!

So yummy! A great recipe to adapt. 1. cinnamon, blueberries & whole wheat flour 2. cocoa powder, chocolate chips, 1/2 orange juice, 1/2 milk and orange rind 3. lemon rind, crandberries and a few squeezes of lemon juice THANKS FOR POSTING THIS GREAT RECIPE

Orange Glorious II

Added a splash of heavy cream for richness and a little less sugar. Served the kids then added Mango Malibu for the adults. (Put the extra in popsicle holders, froze them and made icy cocktails the next night too!!) Keeper!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Love it. Used a little butter, a little coconut oil. Added shredded fresh spinach. Slightly mashed it to make it a little more stew like. Hope the family likes it because I sure do. (update- big thumbs down from the kids but me and hubby LOVE IT!!!)

Peppermint Meringues

Turned out great. Placed a toasted blanched almond at the bottom and skipped the peppermint part. Also made them a little bigger so had to cook for about 20 minutes longer.

Blueberry Pie

Was a little runny- will add more cornstarch next time. My berries were also very sweet and I think that 3/4 cup of sugar was too much. I will try less next time. This recipe is, well, as easy as pie.

Brown and Wild Rice Salad

Good recipe. Used an ancient grain mix from costco and added some chopped celery instead of nuts. Next time I will add mandarin oranges. A keeper for sure....maybe a little heavy on the vinegar taste but I just cut back a little.

Jenny's Black Forest Cake

Good cake. I only made 1/2 the recipe and cooked them in smaller loaf pans because there was only 4 people to feed -way more than enough. Worked great as a log shaped cake- ended up being four layers. I skipped the brandy, but forgot to add the extra liquid in lieu. The cake should have been a little more moist. I will make sure to add it next time.

We have loves this recipe for many years and after our move, I couldn't find it. Of course it was on all recipes!! I add 1/2 chocolate chips and 1/2 dried cranberries.
