Chicken Potpie

Can't imagine it getting any better than this. I used a pie crust recipe from my Better Homes & Gardens cookbook and the whole thing was divine. Chicken pot pie is a lot of work with the cooking the chicken, cooking the veggies, and making a homemade pie crust but this recipe definitely makes it worth it. I've always been turned off of so called homemade chicken pot pies that are made with store bought crust, frozen veggies, and canned soups. Try this and you'll see how good homemade is. Thanks so much for sharing the recipe.

Cinnamon-Sugar Popcorn

This is really good and really easy. After reading some of the reviews I decided to use 1/2 cup unpopped popcorn and followed the rest of the recipe. Delicious but a tad overly sweet. I made it again the next day because it was such a hit. That time I used 3/4 cup popcorn and 1 slightly heaping teaspoon cinnamon. Perfection. And FWIW, I never had a problem getting the popcorn and the sugar/butter mixture mixed thoroughly. This is a great alternative to caramel corn.

Andy's Spicy Green Chile Pork

Easy and delicious. I used 1 serrano because I have kids and they don't like spicy food. It still had a little kick to it, though. Very good. I'll definitely make this again. Very good with corn tortillas and guacamole.

Glazed Dijon Carrots

A good, basic glazed carrot recipe. I love the dijon flavor in it. I made the recipe as it was posted and we liked it but I may try some dried herbs and fresh ground pepper next time.

Sauteed Apples

We liked this over oatmeal. Next time I'd add less water and cook the apples covered over low heat for about 10 minutes after all the ingredients are added.

Honey-Balsamic Vinaigrette

Fast, easy, and delicious. You can easily customize it. If you want more sweetness-add more honey. More tang-add more vinegar. A few grinds of black pepper add an extra zip, too.

Banana Pudding Cake

I wasn't sure if I should give this cake 3 stars or 4. I think if you like cake mixes you will like this cake. It's moist, light, and airy. However, if you prefer cakes made from scratch, you will probably not be impressed. You can't disguise the taste of a boxed cake mix with a package of pudding and some mashed banana. It's good for what it is but not a fantastic cake.

Banana Cream Pie I

Really great pie. The pudding is delicious. I used whole milk and added it a half cup at at time, stirred, and let it thicken before adding another half cup. It did not turn out soupy at all. When I cut into it it held it's shape. I've made it twice in the past week. It's that good.

To Die For Blueberry Muffins

I've made these muffins a few times and the flavor is great. A couple of changes I'd make next time is make 9 or 10 muffins rather than 8. I'd also cut the topping recipe in half. After overfilling the muffin tin and then too much topping, it spills over the top of the muffin tin. If the muffin sinks a little after the topping has formed a crust, the crust will collapse and that doesn't make for an appetizing muffin. I think a lighter sprinkle of topping would help with that. I will also add some vanilla.

Cinnamon Carrot Bread

I've had an abundance of carrots lately so I've tried quite a few different carrot bread recipes in the past week. This is the first one I loved. This is the kind of quick bread I love - dense and moist. I did add about 1/2 cup sour cream and I didn't have any nuts. Those were the only changes I made. This is definitely a keeper for me.

Big Guy Strawberry Pie

The crust on this pie is delicious. However, when baking the crust it didn't brown in the 8-10 minutes suggested. It just needs to be baked a little longer. Next time I might use a little less cornstarch in the glaze. It was a little thick for my taste. Overall, it was great with a big dollop of whipped cream.
